Simple Chicken Menudo



Menudo is not only a name of a dish in Philippines but also in Mexico, although in Mexico they used tripe, in Philippines they used chicken meat, pork or beef. I made simple menudo today, simple in the sense that I did not put, bell pepper, onion, raisins and liver spread. As I have said I want to make cooking easy and simple for everybody. I omitted some ingredients but it doesn’t affect the real taste of the recipe. That is my way of cooking.

Ingredients:

1/2 kilo chicken breast( cut into bite size)
3/4  cup tomato sauce
1 big potato
1 big carrot
1 small onion
2 tablespoons soy sauce
2 pieces chicken hotdog ( sliced)
1/2 cup water ( add if necessary)
3 cloves garlic
spring or green onions for garnishing
salt and pepper to taste

Procedure:
1. Saute the garlic and the onion,then add the meat, simmer for few minutes.
2. Add the soy sauce, tomato sauce and pepper,simmer for 3 minutes then  add the water and let it boil.
3. Add the potato and carrot cover until it is cook.
4. Add the chicken hotdog then simmer for a minute, add salt and pepper to taste simmer then turn off the heat.
5. Garnish with spring onion then serve.


Nilagang Baboy-Pork Stew


Pork Stew or nilagang baboy as Filipinos called it, is one of the popular dishes  in Philippines, aside from it is easy to cook, it is also delicious. The main ingredients are water and pork, although additional ingredients varied from one region to another. In some regions they do not put carrots in pork stew (nilagang baboy). It is also nice with lemon grass. Here is my style of cooking it.

Ingredients:
1/2 kilo pork
1 carrot ( sliced)
1 small onion ( quartered)
1/4 kilo Chinese cabbage or bok choy
1/2 teaspoon whole black pepper
5 cups water
salt to taste

Procedure:
1. In a pot put the meat, water, black pepper and onion.
2. Let it boil and stirring occasionally, just add water if necessary
3. If the meat is already tender add the carrots let it simmer for 3 minutes
4. Add the Chinese cabbage and cayenne or jalapeno chili peppers
5. Dash some salt to taste. Serve it with rice.

Chicken Ramen





Ramen is a Japanese noodle dish.

I love to make this during cold days.

Ingredients:
2 packs of instant ramen noodles ( do not use the flavoring)
spring onion
1 carrot ( diced)
1/4 kilo chicken breast
2 hard boiled eggs
3 cloves of garlic crushed
2 cm ginger
salt and pepper to taste

Procedure:
1. Boil the chicken breast with 6 cups of water, when the meat is cooked separate it from the broth= sliced the chicken breast and set aside
2. In a pan saute the ginger and garlic, add the chicken broth, cover until it boils.
3. Add the carrots, simmer for few minutes.
4. After simmering the carrots remove it from the broth and set aside
5. Cook the noodles in the broth until done. Season according to your taste.
6. Remove the noodles put into a bowl then top it with the sliced chicken breast, diced carrots, sliced hard boiled egg, spring onion and pour some broth then serve.

Braised chicken Gizzard


I cooked this today ( Sept. 28, 2011).  My friend (Vince) and I talked about exotic food a while ago, and I told him that the gizzard of the chicken is delicious, if you know how to cook it. It does not smell odd at all. I told him that I will cook it and post it here lol. So to everyone there who wants to have a little food adventure, here is the one that you can try.

Ingredients:
1/2 kl. gizzard
3 cloves garlic
2 tablespoons soy sauce
2 tablespoons ginger strips
1 small bell pepper
spring onion for garnishing

Procedure:
1. Saute the ginger and garlic
2. Add the gizzard, braise it for few minutes.
3. Add the soy sauce, and lower the heat, cover it.
4. Simmer until the gizzard is tender. ( approximately 15 minutes)
5. When it is almost done add the bell pepper.
6. Serve it hot and garnish with spring onion.

Buttermilk Chicken Fillet


 From the usual fried chicken that I always cook for special occasions, I tried a new flavor for it, by using buttermilk as a marinade. I saw this recipe from an internet and I also want to share to all of you.

Ingredients:
1 kl chicken fillet ( breast then just slice it into fillet)
1 glass butter milk
4 cloves garlic ( crushed)
1 lemon ( or 5 calamansi)
1 small size onion ( chopped)
2tablespoons soy sauce
2 glasses bread crumbs ( for breading)
salt and ground pepper to taste

Procedure:
1. Put the lemon, soy sauce, salt and pepper to the chicken fillet( Mix it well) Let it stand for 10 minutes
2. After 10 minutes pour in the buttermilk and marinate the chicken for 30 minutes.
3.After 30 minutes,  remove it from the marinade and set aside.
4. Roll the chicken fillet on the breadcrumbs.
5. Deep fry it until golden brown and serve it with your favorite side dish.

Tips: If the breadcrumbs wont stick well, just beat one egg and mix it well with the chicken before breading it.

Green beans with pork


This recipe is one of the favorites in our dining table. It is yummy and easy to cook. I like it crunchy. Overcooking it, will lost its taste.


Ingredients:
1/2 kilo green beans ( cut about 2 inches long)
1/4 kilo pork
2 tablespoons soy sauce
1 small size onion
3 cloves garlic


Procedure:
1.Put the pork in the pan until the oil comes out, wait until it's brownish or toasted. (Set aside)
2. In the same pan, saute the garlic and onion.
3. Add the toasted meat and soy sauce, increase the heat so that when we put the beans it will not turn to greyish.
4. Put the green beans and stir it well. Maintain the high heat to maintain the green color, continue stirring until cooked.
5.Serve it hot.


Simple Spaghetti with tomato sauce

Spaghetti with tomato sauce is the most common dish of spaghetti, although it's an Italian dish, but people in different countries like it. Cooking it with a touch of their  cuisine. And this is also my family's style in cooking it.

Ingredients:

1 kilo spaghetti ( cooked according to its packaging procedure)
1/2 kilo ground beef
4 packs tomato sauce ( 250g)
1/2 cup evaporated milk
1/4 cup white sugar
grated cheese for toppings
1/4 cup soy sauce
5 cloves garlic
1 small size onion
1/4 kilo hotdog


Procedure:
1. Saute garlic, then the onion
2. Add the meat, soy sauce and tomato sauce, let it simmer for few minutes
3. Add the sugar and hotdog, mix it well and simmer again for another few minutes.
4.  Lastly add the milk and let it boil for few seconds and it's done.
5. You can mix the pasta and the sauce together or just top the sauce on the pasta and sprinkle it with cheese.
I cooked this on June 24, 2011.

Chicken Lollipops


My favorite part of the chicken is the wingette or drumette, the base section o the wings, this is the best part to make a chicken lollipop

Ingredients:
1 kilo chicken wingettes
2 cups flour ( for breading)
4 cloves garlic ( minced)
salt and pepper to taste
1 piece egg

wingette or drumette

Procedure:
1. Pull the flesh up with the skin and mold into a lollipop.


2. Marinate the lollipops with garlic, salt and pepper for 30 minutes. After 30 minutes remove from the marinade.Set Aside.
3. In a bowl beat the egg, dip the lollipops and roll it over the flour for breading or the bread crumbs (panco)

4. Fry it until golden brown and serve it hot.

 

The darker ones were coated with Japanese crumbs, the lighter one is with flour.

Chicken Curry


As far as I can remember the first time I ate chicken curry, I do not like it. All I can taste is a strong salty taste and the odor was so strong for me, I was 10 years old then. When my sister cooked vegetable curry, I liked it a lot, I appreciate the taste of the curry, so I thought maybe the chicken curry is yummier because it is meat, but why the one I tasted before was not yummy? Maybe the one who cooked it do not know how? When I was in college I tried chicken curry at the school canteen and it is yummy. Since then, I like chicken curry a lot. I read in the internet how to do it then I tried cooking it and as time goes by I learned, I can say that my chicken curry always tastes good:)


Ingredients:

1 kl. chicken (sliced to your desired size)
2 pcs big potatoes
1 pc. big carrot
1 tablespoon curry powder
2 cups coconut milk
1 bell pepper
4 cloves garlic
1 small size onion
100 grams ginger
salt to taste
chicken cube(optional)

Procedure:
1. Saute the ginger, then the garlic and the onion.
2. Put the curry powder and saute for few seconds to extract the aroma from it.
3. Put the chicken and salt then cover and let it boil before stirring it.
4. Let it boil for few minutes over low heat ( do not add water, because the chicken has its own juice).
5. Add the potatoes and carrots, simmer for few minutes
6. If the chicken meat is already cook, add the belle pepper and chicken cube.
7. Simmer for few minutes then add the coconut milk, cover it until it is done.
8. Serve with love and a smile:)

Mashed Jacket Potato


There are lots of things you can do with potatoes. One of the most popular is the mashed potato. I made this one (mashed Jacket Potato) to be more presentable in serving. Here is how you can do it.

Ingredients:

3 big potatoes
2 tablespoons butter
a dash of salt and pepper

Procedure:
1. Microwave the potatoes for 15 minutes( let it cool)
2. Cut into halves and remove from the skin
3. Mash it well with the rest of the ingredients.
4. Spoon the mixture back into the potato skins.
5. Serve it :)

if microwave is not available, just boil it until its cook, while boiling prick it with fork so that it will not be deformed.

Pork Embutido



Embutido is one of the most popular food in the Philiipines, this is Filipino's version of American meatloaf. It is very tasty and we considered it a  special dish for gatherings. Try this and enjoy.

Ingredients:

1/2 kilo ground pork
1/4 cup flour
1 beaten eggyolk
2 spoons pickle relish
1/2 cup cheese ( diced)
1 pc med. size carrot ( minced or finely chopped)
1/2 cup raisins
1 pc med. size potato ( minced or finely chopped)
1 small size bell pepper ( minced or finely chopped)
1 medium size onion ( minced or finely chopped)
4 cloves garlic ( minced or finely chopped)
salt and pepper to taste
12 pieces Quail eggs (hard boiled and peeled)
Ground Pork

Procedure:

1. Mix all the ingredients except  the quail eggs.
2. Place the meat mixture in an aluminum foil and flatten it.
3. Put in the eggs, roll the mixture until it covers the filling then lock the foil tightly by twisting each ends few times. After this procedure put in the steamer and steam for 40 minutes or until done.







4.Slice and serve it with love :)

add sausage for filling if you want. You can also use a little tomato sauce for a pinkish color


Sugar Cinnamon Donuts



I thought that making donut is not easy, until I tried and I said wow that's so easy.

Ingredients:
4 beaten eggs
2/3 cup sugar
1/3 cup milk (fresh milk or evaporated milk)
1/3 cup butter( melted)
3 1/2 cups flour
3 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon cinnamon

Procedure:
1. Beat eggs and sugar till light.
2. Add milk and butter.
3. Sift together dry ingredients. Add together to the first mixture. Mix well.
4. Chill thoroughly. On lightly floured surface, roll dough 3/8 inches thick.
5. Cut with floured cutter, let it stand for 15 minutes. Fry in deep hot oil until brown, turning once.
6. While warm, roll over the mixture of 1/2 cup sugar and 1 teaspoon cinnamon if desired. Serve w/ a smile :)

If there is no donut cutter, just use the brim of a regular size glass, and use a smaller one to make a hole.

Baked Lasagna


Lasagna is a type of pasta that is long and wide. Traditionally the dough was prepared in Southern Italy according to the information that I’ve read and there are few theories about the origin of lasagna, one of it states that ” that lasagna comes fromGreek  λάγανον (laganon), a flat sheet of pasta dough cut into strips. The word λαγάνα (lagana) is still used in Greek to mean a flat thin type of unleavened bread”.  Wherever it originated, I will always like this delicious dish. Mmmmmmm cheesy and beefy baked lasagna. A special treat that you can serve to your loved ones. In the Philippines, this is how we prepare lasagna.

Ingredients:
1/2 kilo Lasagna noodles ( cooked according to its packaging procedure)
1/2 kilo ground beef
3 packs tomato sauce ( 250g)
1/2 cup nestle cream
1 tablespoon white sugar
1/4 kilo Mozarella cheese ( grated)
1 med. size onion
6 cloves garlic
ground pepper

Procedure for the SAUCE:

1.Saute garlic and onion, then add the ground beef and ground pepper then simmer for few minutes until the pinkish color of the beef disappeared.
2. Add the tomato sauce and sugar, simmer for few minutes, ( add salt if necessary).
3. Add the Nestle cream and simmer for a minute then turn off the heat.

Procedure for Baking
In a tray where you are going to bake the Lasagna, arrange properly by putting alternately the lasagna noodles, sauce and mozarella cheese, then bake it.

Preheat oven to 180 degrees C for 10 minutes.

Bake it uncovered, for 45 minutes or until cooked. Let it  stand for 15 minutes before serving.



Beef with peanut sauce


Yummy!

Ingredients:
1/2 kilo beef ( slice according to your desired size)
1/4 kilo cabbage ( sliced)
2 pieces carrots ( sliced)
1 med. size onion
5 cloves garlic
some olives

For Peanut sauce
3 tablespoons soy sauce
2 tablespoons peanut butter
1/4 glass orange juice

Procedure for peanut sauce:
In a bowl mix all the ingredients for Peanut Sauce, set aside

Procedure for cooking:
1. In a wok/pan saute the garlic then add the onion.
2. Add the meat, simmer for few minutes,( add water if necessary to avoid drying)
3. Add the carrots and olives,  cover it for 2 minutes.
4. Add the cabbage cover for 1 minute. Mix it well.
5. Add the peanut sauce simmer for 2 minutes and its ready to serve.


Tips: its better to use a tender meat and slice it for a bite size ( in the picture the slice of meat is big but i pressure cooked it)




Onion Rings



I always like onion rings, but sometimes onion rings at restaurants are not that good, their batter is lumpy. I always look for the crispness of onion rings. I cook it every now and then but sometimes when it is already cold the crispness disappeared. So I searched what is good for it to retain the crispness and I found out the secret, and I want to share it to all of you.

Ingredients for 3-4 servings
2 big onions ( Sliced into rings)
1 cup flour for batter
soda water (the secret)
a dash of salt and pepper
Onions sliced into rings

Procedure:
1. In a bowl put 1 cup of flour and pour slowly the soda water, just calculate how sticky the batter should be
2. Add the salt and pepper, mix well.
3. Dip the onion in the batter then deep fry it until golden brown. (Make sure that the oil is very hot)
4.Serve hot.


This is good as a side dish or snack. I am sure everybody will love it.

Camote cue ( Sweet Potato with Sugar)



One of my favorite snacks is camote cue

Ingredients
2 medium size sweet potatoes ( sliced to your desired size)
oil for frying
sugar

Procedure:
1. Heat the oil
2. Put some slices of the sweet potatoes then cook until half cooked
3. Make a space in the middle by moving the sweet potatoes at the side the put sugar and melt it, then mix the fried potato and stir well until fully coated, then continue to stir until cooked.
4. Serve it as it is, or you can put it on the bamboo skewers.




Sweet Popcorn


I always want to treat my nephews and nieces with something new and delicious. So I decided to try a pop corn with a caramelized sugar. They loved it so much  more than the usual pop corn with salt. Since then , if pop corn is available they always want me to cook for them caramel popcorn.
Here is the recipe for it.

Ingredients:
1/2 cup popcorn
1/4 cup sugar
1/4 cup oil

Procedure:
1. Heat the oil, put the pop corn and wait until all popped (set aside)
2. Melt the sugar in a pan ( do not put water or oil)
3. When the sugar is totally melted or caramelized put the popcorn and mix it well. Presto! you have a caramel popcorn, sweet and yummy!

Lechon Kawali


It is late night now and my friend, Loida wanted to eat something heavy and special. I said why you are craving so much it is already late in the evening, she said because "I am so hungry", so please cook now the lechon kawali, because we both bought the pork belly yesterday, that is why she knew. So I made her wish came true. I cook the lechon Kawali as quick as I can and here is the way I did it.

Ingredients:
1/2 kilo Pork Belly
1 small lemon or 2 calamansi
4 tablespoons soy sauce
1/4 teaspoon ground pepper
salt to taste

Procedure:
1. Mix all the ingredients. Since there is no time to marinate the meat just prick it with fork so that the taste of the marinating sauce will penetrate the meat.
2. Deep fry the pork belly until it is cooked.
3. Cut into bite size and serve with your favorite sauce. :-)

IF you have time it is better also to boil the meat first, then after boiling put the marinating sauce then deep fry until golden brown.

Fish Sarciado



I love cooking fish this way, because the blending of the tastes of   tomatoes and eggs goes well together.

Ingredients:
1/2 kilo fish
3 med. size tomatoes (sliced)
1 med. size onion ( chopped)
3 cloves garlic ( minced)
salt and pepper to taste
1 egg.( beaten)

Procedure:

1. Fried the fish. Set aside.
2. Saute the garlic, onion and tomatoes.
3. Add 2 glasses of water let it boil.
4. Add salt and pepper
5. Add the fried fish simmer for few minutes.
6. Add the beaten egg, stirring constantly so that the soup will thicken like in the photo. Let it simmer for 2 minutes, Serve it hot and with a smile:)

How To Cook Bicol Express



I cooked this for lunch on August 26,2011. Just craving for some chili hot flavor that time, and I've decided Bicol Express since it's been a long time that I have not eaten it. I missed the taste of it from my brother's cooking.

Bicol express is one of the popular dishes in the Philippines. It was named after one region in the Philippines which this dish originated (Bicol).
 They called it Bicol Express because they said when you eat it you will look for
 a drinking water as quick as you can  because it is so hot!!!:D Have a chili hot experience in your kitchen by cooking Bicol Express for one of your meals. Here is the recipe for it.

Ingredients:
1 kilo pork or beef
1 tablespoon shrimp paste ( bagoong)
1 onion
5 cloves of garlic
1 1/2 cup coconut milk
200 grams jalapeno or cayenne pepper(siling haba)chopped
salt and pepper to taste


Chili

Procedure:
1. Saute garlic and onion then add the chili and continue to saute for a minute over medium heat.
2. Add the meat, simmer for few minutes then add the shrimp paste and stir. Simmer until the meat is tender.


3. Add salt and pepper to taste then simmer for 3 minutes.

4.Add the coconut milk, simmer until rich and creamy over high heat.
5. Serve with a smile :-).




Banana Fritter


When I was young I thought banana fritter is so difficult to make, but when I tried it, it is as easy as counting 1-2-3 :) It is a good dessert that your family will love, so treat them now. Just follow this simple steps.

Ingredients:
Ripe bananas ( it depends how many pieces you want to cook)
1/2 glass milk
1 egg
1 glass bread crumbs or flour

Procedure:
1. Mix the egg and milk
2. Put the banana one by one and roll over the bread crumbs or flour.
3. Deep fry it until golden brown.... that's it! Yummy banana fritters


You can top it with all purpose cream for a creamy taste. It is also better to use breadcrumbs for this fritter than flour, because the crispiness of bread crumbs stays longer than flour.

Fish Adobo


Adobo is a very popular dish in the Philippines. There is a joke among Filipinos, that you are not a real Filipino if you do not know how to cook adobo :D.  Pork or chicken is the typical meat use in cooking it. But we can also use fish in cooking adobo and here is how to do it.

Ingredients:

1/2 kilo fish
1/4 cup vinegar
1/2 cup Soy sauce
3 cloves garlic
thumb size ginger
1small onion
black pepper
salt to taste
chili pepper (jalapeno or cayenne) optional

Procedure:
1. Saute the garlic, ginger and onion then put the vinegar and soy sauce then allow to boil, once boiling add the fish, black pepper and chili pepper then simmer until fully cooked.
2.Serve it with rice.

Fettuccine Carbonara


When I cooked this carbonara, it was just random, I did not plan to cook it for that day, that is why I do not have any bacon in the fridge, so I replaced bacon with a ground beef, it taste good, because the main ingredients for the sauce which is the all-purpose cream is complete.Thumbs up for this and here is the recipe for it.

Ingredients:

1/2 kilo Fetuccine (you can replace it w/spaghetti if not available)
2 tetra packs(200g) all purpose cream
1/4 kl ground beef ( i replaced bacon with ground beef)
1/2 cup grated cheese ( Optional: have some extra for toppings)
4 cloves garlic
1 small size onion
salt and pepper to taste
oregano flakes ( optional)

Procedure:
For the pasta:
1. in a pot boil the fettuccine until it is cook.
2. Set aside

For the sauce:
1. Saute the garlic and onion.
2. Add the ground beef, cover and simmer for few minutes
3. add the salt and pepper simmer for another few minutes
4. add the all purpose cream and cheese, mix it well and finalize the taste
5. serve it by mixing the fettuccine and the sauce or just top the sauce on fettuccine garnish it with grated cheese and oregano flakes.

Braised Chicken Wings


Here is my braised chicken wings, I decided to used wings because it is one of my favorite parts of the chicken.Yummy!

Ingredients 4 for servings:
1/2 kilo chicken wings
3 tablespoons soy sauce
1  potato ( cubed)
3 cloves garlic
1 small size onion
1/2 cup water
salt and pepper to taste
Banana blossom ( optional)

Procedure:
1. Saute the garlic and the onion then add the chicken and soy sauce, braise it until the chicken is brownish.
2. Add the water and bring to a boil then add the potato, banana blossom, salt and pepper to taste then simmer until it's cooked.
3.Serve hot with rice.



Stir Fried Vegetables with Beef






Ingredients:
1/2 kilo beef
1 dozen quail’s egg ( hard boiled)
2 med. size carrots
1 cup button mushrooms
2 tablespoons so sauce
4 cloves garlic
1 small onion

Procedure:
1. Saute the onion and garlic.
2. Add the meat and soy sauce, simmer until tender.
3. add the mushrooms and simmer for 2 minutes.
4. add the carrots and simmer for another 2 minutes.
5. add the eggs and cover it for 1 minute and that’s it.

Shrimp Tempura Filipino Style


For a very good batter, you can replace egg with soda or sparkling water, it makes the tempura crispier. I put egg because it is available anywhere.

 Ingredients:
15 pcs med. size shrimps ( deshelled or nabalatan na)
1 tablespoon calamansi
1 egg ( beaten)
salt and pepper to taste
1/2 cup  bread crumbs
Oil for frying

Procedure:

1. Butterfly the shrimps by cutting at the back part, then sprinkle with calamansi or lemon juice, salt and pepper to taste.

2.Dip in the beaten egg then roll over the bread crumbs.
3.Deep fry it in a medium heat oil until golden brown.
4.Serve with your favorite sauce.

 

Pepperoni Pizza


One of the most well known Pizza topping is the Pepperoni.
Pepperoni is a kind of Italian-American sausage usually made of cured pork or beef. In Portuguese they call it Calabresa It is very easy to do with Pinoy style sauce. Have fun.
 
Ingredients:
1 big size pizza crust
pepperoni sausage
muzarella cheese ( grated)
pizza sauce.
Procedure:
1. Put the pizza sauce on top of the crust.
2. sprinkle the grated cheese
3. arrange the pepperoni
4. Sprinkle again with cheese.
5. Preheat oven to 250 degrees celcius and bake the pizza for 10-15 minutes

 Ingredients for pizza sauce Pinoy Style:
200 grams ground beef
1 pack tomato sauce (250 ml.)
2 cloves garlic
1 small size onion
2 teaspoons sugar
3 tablespoons evaporated milk
dash of salt and pepper

Procedure for the Sauce
1. Saute the garlic and onion
2. Add the meat simmer for few minutes.
3. Add the tomato sauce, sugar and milk
4. Put a dash of salt and pepper simmer until it's done.
Re-cook May 1, 2014



You can add some onion, etc, I just like it to be simple and savor the strong pepperoni taste.
