Sinigang sa Passion Fruit


Sinigang is one of the well known dishes in Philippines, it could be chicken, beef, pork, shrimp and fish and even vegetables. Maybe some other time, I will share my vegetable sinigang here. There are different ingredients to flavor the sinigang soup like guava, miso, tamarind, tomatoes, passion fruit, calamansi or lemon. I like tamarind more than any other sour flavoring for sinigang. But here in South America it is difficult to find tamarind so I used passion fruit. It is also delicious and the aroma is so good.


Ingredients:
1/2 kilo fish ( any fish of your choice)
1 medium size tomato
1 small size onion
3 passion fruit ( extract the juice)
1 pc eggplant
1 bunch spinach or kangkong
6 cups of water or rice washing (pinaghugasan ng bigas)
some  siling haba (chili)
salt to taste

Procedure:
1.In a pot put the water, chili, tomato, onion , salt and pepper, then bring to a boil.
2. Once boiling add the fish and simmer until half cooked then add the eggplant, simmer for few minutes.
3. Add the kangkong or spinach then simmer until cooked, add the passion fruit extract, then simmer for a minute and turn off the heat.
4. Serve it hot and enjoy.
