Simple Braised Pork Chop


This recipe is simple and easy to cook, you can use your creativity in cooking to improve this dish. Like adding a bell pepper and carrots. I made this simple for a friend to follow because she is just practicing how to cook and she asked me to post a simple dish for pork chop.

Ingredients:
1/2 kilo pork chop
3 potatoes ( sliced to your desired size)
1 onion
4 cloves garlic
1/4 cup soy sauce
salt and pepper to taste

Procedure:
1. Saute he garlic and onion, add the pork chop, increase the heat and  braise the pork chop for few minutes until it is brownish.
2. Add the soy sauce then lower the heat , simmer for few minutes, add water if necessary  cover it until the meat is tender.
3. Add the potatoes then cover, stirring every now and then until it is cook.
4. Serve it with rice and a smile :-)

Sauteed Cellophane noodles


My family's all time favorite. I just cooked the simple way so that all the beginners in cooking can easily follow, but you can improve this and add some more ingredients to make it more special.

Ingredients:
1/4 kilo cellophane noodles ( sotanghon)
1/4 kilo ground beef
1/4 kilo cabbage ( sliced into strips)
2 carrots ( sliced into strips)
1 onion
4 cloves garlic
1/2 cup soy sauce
2 stalks spring onion for garnishing (minced)
salt and pepper to taste
2 cups water or as needed ( it depends upon the sotanghon)

Procedure:
1. Soak the sotanghon in a water until soft enough to cut.  Drain and set aside.
2. In a pan or wok saute the garlic and onion
3. Add the ground beef and simmer for few minutes, pour in the soy sauce simmer for a minute.
4. Add the water and bring to a boil, then add some pepper and salt to taste.
5. Put the carrots and sotanghon then  mix well , add the cabbage while stirring so that it will be mixed well.
6. Simmer for a minute then continue stirring until it is cook.
7. Serve hot and sprinkled with spring onion.

Exotic Paksiw sa Gata


The yummiest Fish paksiw sa gata ever! Try it!

Ingrdients:
1 kilo fish
1 unripe mango
1/4 kilo okra
1/4 kilo talong
1/2 kilo Squash
chilli pepper
thumb size ginger
4 cloves garlic
1 cup vinegar
2 cups coconut milk
salt and pepper to taste


Procedure:
1. In a pot arrange all the vegetables  properly including the ginger and garlic.
2. Next, put the fish, mango and chili peppers.
3. Pour in the vinegar, salt and pepper, cover and let it boil
4. When it is already boiling reduce the heat and simmer untill everything is cooked then add the coconut milk.
5. Simmer for a minute then serve it hot and with rice.

Crispy Chicken Fillet



One of the chicken dish that I like is crispy chicken fillet,  tender and juicy mmmmm, this is how I made it.

Ingredients:
1 kilo chicken breast ( sliced into fillet)
2 lime or 10 calamansi
1/4 teaspoon ground pepper
1 tablespoon chicken powder
salt to taste

For Breading:
 1 egg beaten
 2 cups flour

Procedure:
1. Mix all the ingredients and while mixing it, massage or press the meat so that the flavor can penetrate.
2. Then soak in the beaten egg and roll over the flour.
3. Deep fry until golden brown and serve it hot.

Linagpang


Nilagpang or linagpang  is a popular Ilonggo Dish, in Visayas region of the Philippines where this recipe originated this is always a very special treat for the whole family. There is even a novelty song about this dish sang by the late Yoyoy Villame. "Nilagpang ko nga turagsoy sa sabaw naglangoy langoy" :D that's all I can remember. The original recipe consist of grilled mud fish. My Dad who is an Ilonggo made this everytime he caught mud fish (dalag). I hope you will like this recipe :-)

Ingredients:
1/4 kilo fish  ( fried)I used tuna for this recipe but you can use any kind of fish that you like.
1 onion (sliced thinly)
2 tomatoes ( sliced thinly)
salt and pepper to taste
chili pepper
2 stalks spring onion ( minced)
1 small bitter melon (ampalaya)
 boiling water
Optional (you can add fish sauce )

Procedure:
1. In a big mixing bowl, put all the ingredients except the boiling water.

2. Then pour in the boiling water that is enough to cover all the ingredients and serve it.

Vanilla Pancake

Easy to prepare pancake for the whole family to enjoy :-).

Ingredients:
2 cups all purpose flour
2cups milk
6 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg ( beaten)
1 tablespoon liquid vanilla
2 tablespoons butter or margarine ( melted)

Procedure:
1. In a big bowl sift (sala-in) together the flour, sugar, salt and baking powder
2. Then make a well or space at the center and put the beaten egg, milk, vanilla and melted butter. Mix it thoroughly until  smooth or firm.
3. In a pan heat a little oil and spoon a portion of the pancake mixture and cook until both sides are brown.
4. Serve hot with pancake syrup or butter on top.

Traditional Macaroni Salad


When I was young our macaroni salad is as simple as this one, but it is still the best macaroni salad for me, not so many ingredients but still yummy. I miss this every now and then that's why I made some for me and my friends.

Ingredients:

1/2 kilo elbow macaroni
500 ml Nestle cream or light cream
1 cup mayonaise
1 cup diced cheese
3/4 cup raisins
1 cup condensed milk
1/2 cup evaporated milk

Procedure:
1. Cook the elbow macaroni according to its packaging procedure. Drained and set aside.
2. Combine all the ingredients and mix well.
3. Chill or put in the refrigerator before serving.


Cabbage and Tomato Salad

A delicious salad for the whole family. Easy to prepare and goes well with meats or seafoods. Try it.

Ingredients:
1/4 kilo cabbage ( shredded)
1 onion (sliced thinly)
3 tomatoes ( diced)
2 tablespoons olive oil
1 lemon
salt and pepper to taste

Procedure:
1.Mix all the ingredients
2. Serve it with love :-)


Fried Fish

Simple to cook but still some do not know how to fry fish so I just wanna share this simple dish. Have fun!

Ingredients:
1 kilo fish (cleaned and cut)
2 lemon or 8 calamansi
salt

Procedure:
1.  Squeeze the lemon or calamnsi into a fish then sprinkle with salt.
2. Heat the oil in a pan then deep fry the fish until golden brown.
3. Serve it with your favorite side dish or sauce.

Beef Adobo


Here in South America, beef is so abundant, and most of the time I prepare beef steak when it comes to beef dishes. For a change I thought of making beef adobo and the result is fantastic! Here is how to cook it.

Ingredients:
1 kilo beef
1/2 cup soy sauce
1/2 cup vinegar
6 cloves garlic
1 onion
2 tablespoon tomato sauce
1/2 teaspoon ground pepper
1/2 glass water

Procedure:
1. In a pressure cooker put all the ingredients
2. Cook over medium heat , once it's starting to boil time it for just 15 minutes then, check if its already tender. if yes, then transfer it to another pan.
3. Continue cooking and increase the heat so that some of the soup will evaporate making our adobo just saucy.
4. After this process turn off the heat and serve it with rice. :-)

Gelatine And Fruit Cocktail Salad


If you remember I posted the gelatine salad few weeks ago, it was a success because when I let my friends taste it, they liked it a lot,  now I make one with fruit cocktail. It is still easy and simple to do. Here is how to do it.

Ingredients:
2 sachets unflavored gelatine
2 sachets orange flavored gelatin
2 sachets grape flavored gelatine
1 can condensed milk
1 can all purpose cream or nestle cream
3 cups fruit cocktail

Procedure:
1. prepare the gelatine according to its packaging procedure, refrigerate then diced it all.
2. Pour in the milk and all purpose cream.
3. Add the fruit cocktail, mix well.
3. Refrigerate before serving.

Classic Fried Chicken



The classic fried chicken,  when I was younger, my mom always put this in my lunchbox once a week, since Grade 1 until Grade 6, whew for 6 years :D but for me that's always the best lunchbox item during that time. Its just simple unbreaded fried chicken, here is how to cook it.



Ingredients for 8-10 servings:
1 kilo chicken
1 lemon or 6 calamansi
1/2 cup soy sauce
1 teaspoon ground pepper
salt to taste

Procedure:
1. Mix all the ingredients and marinate overnight.
2. Deep fry until golden brown. ( Increase the heat  before removing it from the oil to make it really crispy)
3. Serve it hot.

shanghai rolls



This is an all time favorite dish of my family, every time we have parties or just a weekend family gathering Shanghai rolls is always present:). Crispy, delicious, and budget fiendly. Try this recipe.

Ingredients:
1/2 kilo ground pork
40 spring roll wrappers
1 onion ( minced)
4 cloves garlic ( minced)
2 medium size carrots ( minced)
2 medium size poatoes ( minced)
1 beaten egg
1 cup flour
salt and pepper to taste


Procedure:
1. Mix all the ingredients except for the wrapper.
2. In a wrapper put the meat mixture and roll it to wrap.
3. After we wrap all the meat mixture, in a pan heat an oil.
4. Fry the Shanghai rolls until golden brown. ( fry in a moderate heat so that the meat inside will be cooked gradually and to avoid burning the wrapper).
5. Serve it with your favorite sauce.

Monggo with Ampalaya


This dish was randomly cooked when my friends and I are talking at the kitchen then its almost lunch and somebody said "what's for lunch?"  we looked around and saw a pack of mongo and we all said "mongo!" My friend said there is only shrimps and bitter melon in the refrigerator, we said its fine, we can have a delicious mongo with just ampalaya. Here is the recipe for it, it is nice and yummy.


Ingredients:
2 cups monggo
1/4 kilo shrimps
1 piece bitter melon (ampalaya) [sliced]
1 onion
2 cloves garlic
salt

Procedure:
1. In a pot boil the monggo until it is soft, then set aside (You can use pressure cooker for faster cooking)
2. In a pan saute the garlic, then add the shrimps and salt simmer for few minutes.
3. Add the cooked monggo, simmer for  few minutes
4.Then add the ampalaya, simmer for 2 minutes then serve.

Simple Appetizer

some lettuce (sliced)
some cheese (sliced)
olive oil
1 teaspoon lemon juice or 1/2 teaspoon calamansi juice

Sweet potato Tops Salad

Most people, when they make talbos ng kamote salad they boil or blanch the leaves, have you eaten this raw? It is better to eat fruits and vegetables salad raw because raw vegetbles and fruits are alkaline which is good for our body. Just like sweet potato leaves good to be eaten raw.


Ingredients:
3 cups sweet potato tops ( talbos ng Kamote)
1 lemon or 5 calamansi
2 tomatoes
1 onion
2 tablespoons olive oil
salt

Procedure:
1. Wash the sweet potato leaves properly, cut into strips.
2. In a big bowl mix all the ingredients.
3. Serve it with love and a smile :-)

Stuffed Egg Roll


This is the very first special recipe that I learned from my Dad when I was 12 years old. That was long time ago :D but as time goes by I learned to stuffed it with different stuffs, like shredded chicken, seafood, vegatables, mushrooms, etc. Today there are lots of ground beef so this is the stuff that I made, here is how to do it.

Ingredients for 6 servings:
4 eggs
1/2 cup ground beef or pork
1 small onion
1 potato ( thin strips)
1/2 of  a carrot ( thin strips)
salat and pepper to taste


Procedure:
 For the filling or stuff:
1. Saute  the onion then add the ground beef, simmer for few minutes.
2. Add the potato, carrots, salt and pepper to taste. Simmer until it is cooked and set aside

3. In making the egg roll heat an oil in a pan then put the beaten eggs, and after a minute when it is starting to cook put the filling that is enough for the egg when we roll it. ( Too much filling is not good because it will make the roll puffed)

4. Flip over the other side with a frying ladle and start rolling it towards the other and until it will form into a roll.


 5. Serve it with your favorite salad.
 Enjoy it!

Ube Jam or Halayang Ube




Ube jam or halayang ube is one of the popular Philippine dainties, mmmmmmm sweet and delicious, who can resist it? :D here is the very easy way to make it.

Ingredients:
2 cups mashed ube ( purple yam)
1/2 cup butter or margarine
1/2 cup condensed milk
1/2 cup evaporated milk
 

Procedure:
1. In a pan put all the ingredients and mix well over medium heat.

2. Stir constantly until the mixture goes from mushy to dry.

3.  Until you reach the consistency in texture of the mixture that is perfect for a jam.




Stir Fried Sprouted Beans


A delightful dish that will satisfy your hunger :-). Stir fried sprouted beans is pefect specially if you want to eat less rice. Easy and quick to prepare, doesn't it sound good? I love sprouted beans since I was young :-) Stir Fry means cooking in an intense heat making the ingredients to be cooked quickly making it crispy and juicy. This a good method of cooking vegetables to retain the natural color and freshness. Try this recipe.

Ingredients:
1/2 kilo sprouted beans (togue)
1/4 kilo shrimps
1/4 kilo cabbage
3 cloves garlic
1 carrot
salt and pepper to taste
spring onion for garnishing

Procedure:
1. Saute the garlic, add the shrimps and simmer for 30 seconds then add salt and pepper.
2.  Increase the heat for stir frying then add the carrots and sprouted beans, stir fry for a minute
3. Add the cabbage and continue stir frying for around 2 minutes.
4. Garnish with spring onion and serve it hot.

Ingredients:
1 cucumber
1 zucchini
1 medium size tomato
1/4 cup sliced spring onion
2 tablespoons vinegar
1 tablespoon olive oil
salt

Zucchini and Cucumber

Procedure:
1. Slice the zucchini and cucumber according to your desired size.
2. Mix all the ingredients.
3. Serve with your main dish.

Pork Sinigang




Sinigang is one of the best Filipino dishes. The taste is distinctively delicious and the vegetables in it goes perfectly with the soup’s flavor, etiheir meat sinigang or seafoods it is always delicious. Actually this dish is one of my favorites. I let my foreign friends taste it and they absolutely like it ….. a lot. :-)

Ingredients:
1 kilo pork
3 pieces eggplant
1 radish )sliced)
1 bunch String Beans
1 onion ( sliced)
2 tomatoes ( sliced)
1 bunch swamp cabbage ( kangkong)
2 litres  of water
some finger chili ( siling haba)
salt to taste
sinigang mix


Procedure:
1. In a pot  put 2 litres of water then add the tomatoes and onion and bring to a boil.
2. When it is already boiling add the meat and simmer until the meat is tender.
3. Increase the heat then add the eggplant, radish and string beans, simmer until almost cook.
4. Add the kangkong and chili then simmer until all the vegetables are cooked.
5. Add the sinigang mix and salt to taste. ( If tamarind fruit is available its better to use it, natural!)
6. Serve it hot.

Simple Coleslaw



Coleslaw is a salad mainly consist of shredded raw cabbage and is used as a side dish for, steak, burger, and other fried meat. There are many versions in making coleslaw but I will share the very simple one. Here is how to do it.

Ingredients:
2 cups shredded cabbage
1 onion (shredded)
1 cup mayonaise
1/2 teaspoon ground pepper
salt to taste


Procedure:
1. Mix all the ingredients
2. Chill it and use as a side dish or an appetizer.

If mayonaise is not available you can make with vinegar version:
shredded cabbage
white vinegar
Sugar
Salt and pepper

Rice noodles with seafood


I love to cook rice noodles specially if I am already hungry and no there is no food available, because this is easy and quick to cook. I posted already some recipes here with different flavors, but this time I wanna share the one with sea foods.

Ingredients:
1/2 kilo rice noodles or bihon
1/4 kilo shrimps
1/4 cup crab meat ( optional)
1 cup sliced fried fish balls ( sliced)
1 medium size carrot
1 small size onion
3 cloves garlic
1/2 cup sliced celery
5 glasses water
1/4 cup soy sauce

Procedure:
1. Saute garlic and onion, then add the shrimps, crab meat and fish balls, simmer for few minutes
2. Add the soy sauce and pepper, simmer for another few minutes.
3. Add 5 glasses of water, cover until it boils then put the rice noodles simmer for 4 minutes.
4. Add the rest of the ingredients simmer until it is done.
5. Serve it hot
Note: The water depends on the type of rice noodles, some rice noodles require lots of water/some less water.

Vegetarian Pasta

This simple vegetarian pasta is not only delicious but also nutritious.I learned to appreciate this dish from my Indian Vegetarian friend, she served me this, most of the time that I visited her. I like the tofu in this dish and the taste of the tomato sauce is just light and a little peppery taste from the ground pepper,  I made this to treat myself-a light meal :-) Nice to chew.

Sauteed Veggies Ala Pakbet


This dish should be pakbet but unfortunately shrimp paste is not available in my place so I just saute it and put a little soy  sauce. It is still delicious because the ingredients are so fresh. If you like veggies I am sure that you will love this dish. Try it and have fun cooking.

Ingredients:
1/2 kilo Squash
1/4 kilo green or string beans
1/4 klo okra
1/4 kilo eggplant
1 small bitter melon ( ampalaya)
3 cloves garlic
1 onion
1/2 cup soy sauce
1/2 glass water

Procedure:
1. Saute the garlic and onion.
2. Add the squash and soy sauce, simmer for few minutes.
3. Add the water, let it boil then add the eggplat and beans, simmer until it is almost half cook.
4. Add the okra and ampalaya simmer until it is done
5. Serve it with love

Pork Adobo with Pineapple Juice




Adobo is a trademark of Filipino cuisine, there are many ways to prepare this dish as I have shown in my previous posts. Now we are going to cook it with pineapple juice, another delicious way of cooking adobo. The pineapple juice blends well with the pork. Try this!
  
Ingredients:
1 kilo pork
1/2 cup soy sauce
1/4 cup vinegar
1/2 cup pineapple juice
4 cloves garlic
1 teaspoon peppercorn ( pamintang buo)

Procedure:
1.Saute the garlic then add the pork, braise for few minutes.
2. Add the pineapple juice and peppercorn then simmer for few minutes until the meat soaked the pineapple juice.
3. Pour in the vinegar and soy sauce, cover and simmer for another few minutes.
4. Stir it every now and then, and wait until the sauce thickens.
5. Serve it with rice

Cauliflower Salad


I have tasted this dish during lunch at my friend's house, at first I did not get it because there were lots of food surrounding it, but when my friend whispered to me to try it, because it is yummy, I tried, and I was surprised because it doesn't look so attractive but when I tasted it, I said "mmmmmm this is delicious", so I ask my friend how to prepare it and this is how to do it.

 Ingredients:
1/2 kilo cauliflower
1 cup cottage cheese
1 cup all purpose cream or Nestle cream
1/4 cup bell pepper (diced)
salt and pepper

Procedure:
1. Boil the cauliflower until cooked. Slice to your desired size and set aside.
2. In a big bowl mix all the first 4 ingredients
3. Add salt and pepper to taste
4. In a serving platter arrange lettuce then put the cauliflower salad and serve:-)

Ensaladang ampalaya at talbos ng kamote

This Asian salad is so healthy and yummy. My grandmother is always telling us to eat the sweet potato tops ( talbos ng camote) because it is good for blood circulation.

 Ingredients: 
1 regular size ampalaya ( sliced thinly)
1 bundle sweet potato tops ( 1 tali talbos ng kamote) ( sliced into strips)
2 tomatoes ( sliced)
1 medium size onion (sliced)
1/2 cup vinegar
salt to taste
1 tablespoons fried garlic granules ( optional)

Procedure:
1. Mix all the ingredients except the toasted garlic.

2. Place in a platter nicely and sprinkle with the toasted garlic
3. Serve with rice and fried fish or meat.

Buttered Mussels


Mmmmmmm a delicious sea food dish that's full of nutrients from mussels.One of the best seafoods that is very flavorful.

 Ingredients:
2 tablespoons butter
1/2 kilo mussels
1 small onion
4 cloves garlic
3 tablespoons soy sauce
1 cup celery
pepper to taste


Procedure:
1. Heat the butter then saute the garlic and onion
2. Increase the heat then add the mussel stirring constantly until half cooked.
3. Add the soy sauce, cover and simmer for 2 minutes.
4. Add the celery and pepper, simmer until cook.
5. Serve hot with rice :-) delicious!
