Homemade Macaroni and Cheese Salad


Since I loved macaroni salad I made this version. But actually the ingredients that I bought is for American mac and cheese but I am not ready to do it, because my American friend ( Queen Edith) did not whisper to me her recipe lol. Well try this out, its yummy.

Ingredients:
1/2 kilo elbow macaroni
250 ml nestle cream or light cream
2 cups cheese (diced)
1/2 cup condensed milk
1 pack mayonaise (200 or 250 grams)

Procedure:
1. Cook the elbow macaroni according to its packaging procedure. Drained and set aside.
2. Mix all the ingredients.
3. Chill or put in the refrigerator before serving it.

Lugaw (Filipino Porridge)


Craving for a Filipino porridge ( lugaw)  because it's a cold day. I added lots of ground pepper for a hotter taste and its really a bomb in the mouth, really yummy! Simple meal but it satisfied my hunger.

Ingredients:
1 cup rice
6 hard boiled eggs
1 clove garlic ( minced)
3 stalks spring onions
salt and pepper to taste
fish sauce( patis=optional)
8 cups water (add if needed)

Procedure:
1.  Saute the garlic until golden brown then remove and set aside ( we will use it later for toppings)
2. Pour in the rice and saute for a minute, then add salt and pepper and simmer for another minute. You can add some fish sauce ( patis) if it is available.
3. Add the water, then cover ( stirring constantly so that the rice will not stick at the bottom of the pot).
4. When it is already done add the eggs.
5. Serve it hot with minced spring onion and toasted garlic.

Chicken Sinigang


Today is not so hot in my place because it rained in the morning , taht is why I cooked chicken sinigang for lunch. It was not planned to cook sinigang today so I just used what is available in the refrigerator. Anyway it is important that the soup of this dish will be very 100 % real sinigang :-) so for me no matter if the vegetables that you add are the original ingredients or not. I used only what is available too lazy to go to the market, but it is still yummy and I am satisfied. Here is the recipe.


Ingredients:
1/2 kilo chicken
1 small radish
2 cups dandelion leaves (can be replaced with any green leafy vegetable for sinigang)
thumb size ginger
1 onion
1 litre water
1 small pack sinigang mix ( Tamarind powder)

 Procedure:
1.Saute the ginger then onion
2. Add the chicken and braise for a while then add the water.
3. Bring to a boil stirring occasionally until the chicken meat is cooked.
4. Add the radish and simmer for 2-3 minutes.
5. Add the dandelion leaves simmer for a minute then add the sinigang mix.
6. Simmer for another minute then serve.

Banana Galore

I copied this dish from an Italian restaurant, where I ate some few months ago, I like the idea of this because it is easy and simple to do, actually the original ingedients are just banana and cinnamon powder. It is a very good dessert, the smell of the cinnamon is very tempting. Try it.



Ingredients:
ripe bananas ( peeled)
cinnamon powder
chocolate syrup
whipped cream

Procedure:
1.  Slice the bananas into halves lengthwise.
2. Roll over on the cinnamon powder.

3. Arrange in a platter then put some chocolate syrup.
4. Decorate with whipped cream then serve.




Radish and Tomato Salad


A very nutritious salad that goes well with any meat or seafood dishes. The blending of the taste isperfect! Try it.


Ingredients:
1 radish ( peeled)
2 tomatoes ( diced)
1 onion
ginger
3 tablespoons vinegar
salt to taste



Procedure:
1. Slice the radish thinly then squeeze with salt then set aside.
2. Mince the onion and ginger then mix all the ingredients thoroughly.

Saba Con Yelo

One of my favorites during summer season.

Ingredients:
10 peices ripe banana ( peeled)
1 1/2 cups sugar
1 litre water
evaporated milk
ice cubes


Procedure:
1.Cooked the banana in 1 litre of water and 1 1/2 cups of sugar , then set aside.
2.In a serving bowls put the sweetened banana for one serving.
3. Each bowl, put some ice and milk then serve.

Watermelon and Mint Juice



The soothing effect of the minty flavor and the refreshing sweetness of watermelon make this juice so mmmmmmmm, really cool and refreshing. Just a glass and you will be satisfied! Try it!


Ingredients for 2 servings:
1/2 kilo watermelon
8 mint leaves
some ice cubes


Procedure:
1. Put the watermelon and 5 leaves of mint in the juicer.
2 After juicing it, chopped the 3 leaves and mix it with the juice.
3. Put in a serving glass, add some ice then serve.

Super Duper Choco Milk Shake


Woohooo this is really yummy, it's really hot afternoon and I am craving for a really cold drink, I looked inside the refrigerator and there are powdered chocolate, milk and whipped cream, I opened the freezer, oh yeah! ice cubes :) I made something for myself , I called it super duper choco milk shake and here it is!




Ingredients for 2 servings:
3 tablespoons sweetened chocolate powder
1/2 cup fresh or evaporated milk
8 ice cubes
1 tablespoon sugar or according to your taste



Procedure:
1. Put all the ingredients in a blender, and blend well.
2. Pour in a serving glasses and topped it with whipped cream and some chocolate syrup.
3. Serve with a straw. enjoy sipping it :-)

Avocado Smoothie



Simply Yummy!

Ingredients for 6 servings:
1 ripe  Avocado
1 cup evaporated milk
1/4 cup condensed milk
ice cubes
sugar to taste
Avocado

Procedure:
1. Put all the ingredients in a blender. Put ice until 3/4 full of the blender
2. Blend well until smooth
3. Pour in serving glasses then serve.

Mais Con Yelo


This is a delicious cold treat from a mixture of shaved ice ( but i do not used shaved ice instead I used a blender to puree the ice and milk), milk, and corn kernels. This is very popular in the Philippines during summer months, a good alternative for halo halo, but I will post halo halo recipe soon when my ingredients for it will be completed.

Ingredients:
2 tablespoon corn kernel
5 ice cubes
1/4 cup evaporated milk
2 tablespoons condensed milk ( or if you want it sweeter you can add more)

Procedure:
1. In a blender put the ice, sugar,  condensed and evaporated milk then blend well.
2. In a serving glass put alternately the blended ice and corn.
3. Serve it.


Watermelon Juice

It is summer in our place and watermelon is so abundant. One of the fruits that will really quench your thirst under the heat of the sun. Just a cold glass of fresh watermelon juice and you will be refreshed. Here is how to make a glass of fresh watermelon juice.

Ingredients:
1/2 kilo watermelon


Procedure:
1. In peeling the watermelon, just remove the green part after doing this, put the flesh in the juicer until you obtain the desired amount of juice that you needed.
2. Put in a serving glass and enjoy it.

Avocado wrapped with Lettuce


I've got the idea of this recipe from the internet, but instead of using bacon to wrap the avocado I used lettuce. Healthier and cheaper. This is a very good meal starter, really creamy and yummy specially if the ingredients are very fresh. I served this during lunch today and my friends liked it.They said that the creamy taste of avocado and the crispness of the lettuce makes the dish a real glorious food :-).

Ingredients:
1 avocado
lettuce
1 lemon
2 tablespoons olive oil
salt and pepper to taste

Procedure:
1. Slice the avocado into halves lengthwise then slice each half into 5 wedges.
2. Wrapped each slice with lettuce.
3. Arrange in a seving platter .
4. Sprinkle with lemon juice, olive oil, salt and pepper.
5. Serve it with a smile :-)

Pork Adobo With Pineapple


Adobo is a trademark of Filipino cuisine, there are many ways to prepare this dish as I have shown in my previous posts. I consider adobo as a versatile  dish because we can prepare and present it in various ways and all of it taste really good. Have you tasted it with pineapple? Try this recipe.

Ingredients:
1 kilo pork
1/2 cup soy sauce
1/2 cup vinegar
1 cup pineapple chunks together with its juice
4 cloves garlic
1 teaspoon peppercorn ( pamintang buo)

Procedure:

1.Saute the garlic then add the pork and simmer for few minutes with the peppercorn,  soy sauce and vinegar.
2. Mix well, then cover and simmer until the meat is tender.
3.When the meat is tender and the sauce thickens, add the pineapple and simmer for few minutes until it is done.
4. Serve it with rice

Chocolate Ice Cream



I am into ice cream making lately since it is summer in my place. My friends and I are always looking for something that will refresh us during afternoons ( as in everyday :D ). Here is another ice cream flavor that I made. Simple and easy.


Ingredients:
1 cup chocolate powder
1 cup evaporated milk
1 cup all purpose cream ( 395 Grams)
1 cup condensed milk

Procedure:
1. In a blender put all the ingredients and blend well.

2. Pour in a container and put in a freezer.
3. Wait until it will be frozen
4. Garnish it or serve it plain.

Special Combo Salad

This combo salad is a good item at a dinner table specially for family gatherings because it is not only nutritious it is also budget friendly. I made this when I need to feed more than 30 persons.

Ingredients:
Lettuce ( sliced)
Tomatoes ( sliced)
Carrots  (shredded)
oranges
Onion  ( slice into rings)

For Salad dressing:
Olive Oil
Lemon Juice
salt and pepper


Procedure:
1. In a big serving tray arrange all the main ingredients properly.
2. Sprinkle it with the salad dressing.
3. Serve it.

Orange Juice with diced Watermelon

Perfect to refresh yourself  under the heat of the sun. All natural juice from orange with diced fresh watermelon to quench your thirst, mmmmmmmm refreshing!

Ingredients:
5 oranges
1 cup diced watermelon
3 ice cubes


Procedure:
1. In a juicer put the oranges to extract the juice then pour in a glass
2. Add the diced watermelon and ice.
3. Enjoy your refreshing drink!

How To Fried Meat Loaf



There is nothing special with this, but I just wanna share how I cooked it, I crave for this because I remember my elementary school days, this is my favorite lunch box item:-).

Ingredients:
1 can meatloaf
1 egg ( beaten)


Proceudre:
1. Slice the meatloaf
2. After slicing the meatloaf add the beaten egg.
3. Coat each slice of meatloaf with the beaten egg then fried it.
4. Serve it hot.

Gelatine delight

This gelatine delight is a good dessert for the whole family, I find this attractive for children's party as well. Sweet, creamy and delicouswhat else you could ask for? Make this recipe and have a great time with your family.


Ingredients:
strawberry  flavored gelatine (prepared according to packaging procedure).
whipped cream
cherries for toppings

Procedure:
1. After preparing the gelatine according to its packaging procedure pour it into serving cups then refrigerate.
2. When it is already hardened and ready to be served, arrange it in a tray properly.
3. Topped it with whipped cream and cherries then serve it.

Strawberry Super Shake


It is always a hot day in my place that is why I am doing refreshing drinks lately in my posts. I solicit recipes from friends and search in the net about something cold to drink and I am lucky because I have a friend that worked at a pizza parlor before and she shared this secret :-) strawberry super shake, This is really yummy and refreshing. Try this!
 
Ingredients:
1 scoop of  strawberry ice cream
5 strawberries
8 ice cubes
1/4 cup evaporated milk
2 tablespoons condensed milk

Procedure:
1. In a blender, put all the ingredients, and blend well until it is pureed.
2. Put in a serving glass then serve

Watermelon and Tomato Juice

A refreshing juice from a combination of tomato and watermelon that is packed with vitamins and minerals. Both fruits are rich with lycopene that is a very good antioxidant and anti cancer substance. Have a glass of this juice and enjoy your day.

Ingredients: For a big glass of juice

2 medium size tomatoes
2 glasses watermelon cubes

Procedure:
1. To have a refreshing juice refrigerate the fruits to chill it.
2. Then in a juicer, put the watermelon and tomatoes alternately until the process is done.
3. Put in a serving glass and enjoy drinking it :-)


Odong Noodle Soup


I missed this dish called Odong, when I was young we always have it, around thrice a month specially during harvesting time at our farm,  where we need to feed lots of laborers, my mom will just cook fried fish and odong.  I love eating it. When I saw odong noodles in a Chinese store, my eyes sparked, I smiled and grabbed a pack. Memories of my childhood flashed back. This dish is popular in my city ( Davao City , Philippines). Here is how to cook it.

Ingredients:
1/4 kilo Odong noodles
1 can sardines
1 onion
4 cloves garlic
salt and pepper to taste
water
spring onion


Procedure:
1. Saute garlic and onion
2. Add the sardines, salt and pepper and simmer for 2 minues.
3. Add water (just calculate that it will be enough until the noodles is cook)
4. Serve it hot and garnish with spring onion.

Strawberry Ice Cream

Ughhhhhhhh, it is really a hot day today, 32 degrees celcius or 89.6 degrees fahrenheit. I can not refuse not to eat ice cream to cool down myself. So to avoid too much chemicals from it and too much sweetness  I make my own ice cream. Like the banana ice cream that I posted few days ago, I use natural fruits as the base flavoring ( 100% sure that the flavoring is not chemically ready made).Now I will be sharing the strawberry ice cream. It is delicious although it is not as pink as the strawberry flavored ice cream over the counters. I do not worry about the color because the taste is still delicious. It is simple and easy to make, here is my recipe for it.


Ingredients:
12 pieces strawberries
1 cup evaporated or fresh milk
1 can condensed milk ( 395 grams)
2 packs of all purpose cream ( 400 grams)


Procedure:
1. In a blender put all the ingredients and blend well.
2. Pour in a container and put in a freezer.
3.Check it and when it is starting to froze mix it well then put back in a freezer do this process for 3 times every 30 minutes.
4. After the procedure number 3 wait until it all froze or ready to be served.
5. Serve it with your favorite toppings or garnishes.




Sweetened Cassava with Coconut Milk



 I saw cassava from a supermarket the other day, so I decied to cook sweetened cassava because it's been a long time that I haven't eaten it. I always have it at our farm when I was young. It is delicious and creamy and also a good replacement for rice. Try this recipe.

Ingredients:
1 kilo Cassava ( kamoteng kahoy)
2 cups sugar
2 cups coconut milk
3 cups water ( add if necessary)
1/4 teaspoon salt

Procedure:
1. In a pot put the cassava, sugar,  water and salt then bring to a boil.
2. If the cassava is already cooked make sure that the water is almost gone before putting the coconut milk. To let the water evaporate just increase the heat.
3. Pour in the coconut milk and mix well, simmer until it is done.
4. Serve it anytime you want it.

Banana Split

From the banana ice cream that I made the other day,  I came up with this idea. The original banana split was made with 3 different flavored ice cream, ( vanilla, strawberry and chocolate) but nowadays banana split comes in many variation. This is my version of it. Before i will share my recipe I just wanna share my experienced when I was in Thailand I ordered banana split and I was surprised that the banana was serve whole, it is called banana split because the whole banana has been sliced lengthwise then arranged properly in both sides of the bowl and scoops of ice cream were put in the middle of split banana.

Ingredients:
Ice Cream
Banana cut into halves
whipped cream

Procedure:
1.In a bowl that we called boat, put the split banana on both sides.
2. Then scoop the ice cream and put in the middle of split banana
3. Topped with whipped cream and other sweets decoration that you like.

Strawberry Smoothie

The sun is shining so bright today making the day so hot. That is why I am  looking for something to refresh myself with a really really cold drink. I remember my strawberries in the refrigerated  then I check if there are ice cubes, bingo! I can have strawberry smoothie. I am sipping it now then I decided to blog before I forget my ingredients, it is really yummy and creamy, that is why I am so eager to share it to all of you. Here is the recipe for my creamy and refreshing strawberry smoothie.


Ingedients:
6 cubes ice or for a thicker smoothie you can add more ice
6 regular size strawberries
1/4 cup condensed milk
2 tablespoons condensed milk or you can add more for a sweeter taste

Procedure:
1. Put all the ingredients in a blender.
2. On the blender and blend it well.
3. Pour in a serving glass and serve it.

Banana Ice Cream

I am excited to post this blog because I am happy for the result of my banana ice cream. It is not really as perfect as the ice cream from Nestle or Magnolia but it is very good enough to share witll all my loved ones. And I love it because it is made from natural banana and not just a flavoring! Perfect and healthy! Here is my recipe.


Ingredients:
1 can condensed milk
1 can all purpose cream
2 banana
1 cup evaporated or fresh milk

I used 2 pieces of this banana for the ingredients

Procedure:
1. Put all the ingredients in a blender then blend it well.
2. Pour  in a container then put in the freezer.
3. Check it and when it is starting to froze mix it well then put back in a freezer do this process for 3 times
4. After the procedure number 3 wait until it all froze or ready to be served.
5. Serve it with your favorite toppings or garnishes.





Watermelon and Tomato Salad


The abundance of watermelon in my place made me think of this salad.  The sweet taste of watermelon and the sour taste of tomato plus the smell of spring onion and parsley blends well in this salad, making it perfect to be served for all occassions. Try this.


Ingredients:
2 cups watermelon ( cubed and seeds removed)
1 big tomato
2 tablespoons lime or calamansi juice
2 tablespoons olive oil
salt to taste
some spring onion and parsley


Procedure:
1. Mix well the watermelon, tomato, lime juice and olive oil.
2. Dash with salt and garnish with some spring onion and parsley
3. Serve it.

Banana Smoothie

Mmmmmmmmm so refreshing and delicious and very easy to prepare too.  I only made 1 for myself because I am too lazy to make lots for everybody today :D Next time I will do God willing. For now here is my recipe.



Ingredients:
1 banana
6 ice cubes
2 tablespoons condensed milk
1/4 cup evaporated milk
whipped cream


Procedure:
1. In  a blender put all the ingredients (except the whipped cream) and blend until its smooth
2. Put in a serving glass and topped it with whipped cream
3. Serve it with a straw and don't forget to smile :-)

Special Arroz Caldo


Simply delicious! Will write here soon :D so sleepy now, good night everyone:-)

Ingredients:
2 cups rice
1 onion
1/4 kilo chicken
3 tablespoons ginger strips
1/2 cup fish sauce (patis)
1/2 teaspoon pepper
3 cloves garlic
salt  to taste

For Garnishing:
minced spring onion
hard boiled egg
toasted garlic
lime or calamansi

Procedure:
1. Saute the ginger then garlic and onion
2. Add the chicken and braise for a while, then add the fish sauce and ground pepper then simmer for 2 minutes.
3. Add the rice and saute for few minutes allowing the flavor of the fish sauce to penetrate. Cover and simmer.
4. After few minutes of simmering add water that is enough to make the arroz caldo soupy until it is cooked.
5. Garnish it before serving. Mmmmmmm very yummy!
