Chocolate Chips Cookies



This is my first time to make this chocolate chips cookies and I'm glad about the result. :- )
Now I knew that it's just easy to bake cookies, I am scared to try but I'm glad I did. I make it lighter because I use less chocolates, less sugar and I removed the egg from the original recipe, and I am happy that it is just fine! Here is how I did it.

Ingredients:
2 cups flour
3/4 cup white sugar
1 cup butter
1 teaspoon baking powder
1/2 cup light chocolate powder
1/2 cup chocolate chips

Procedure:
1. In a large mixing bowl, put the flour, sugar, choco powder, baking powder, and butter.
2. By using your hands mix well then pour in the chocolate chips but leave some for toppings later before baking.


3. Continue mixing until you form a ball of dough, then spoon a portion and flatten on your palm and put some chocolate chips on top and arrange in a baking tray.
4. Preheat the oven to 170 degree Celcius then bake the cookies for 10 minutes or until done.
5. Serve it..............
I have eaten my share :D.

Chocolate Coated strawberry


It's been a long time that I am longing to make this one for my blog, and today I am lucky that chocolate bars are on sale so I grab some for this recipe. How I was my nephews and nieces are here with me now so that they can taste this and have fun with me. Will anyway, here is the recipe for it.

Ingredients:
12 pieces Strawberries
80 grams chocolate bar
1 teaspoon butter
12 bamboo sticks or skewers

Procedure:
1. Put the strawberries on the bamboo sticks or skewers.
2. Then melt the butter and chocolate in the pan and dip the strawberries one by one.

3. Refrigerate before serving. Have fun!

Greeny Fried Rice



Greeny Fried Rice is a delicious fried rice full with green vegetables, and it is perfect for breakfast because it is loaded with energy giving veggies. This is my own version of fried rice which I cooked on March 13, 2012, I call it greeny because green is the principal color that I saw after cooking it. :D If you loved vegetable I am sure that you will enjoy this. Have a try:-).

Ingredients:
2 cups rice
1/4 cup ground beef
1/4 cup celery ( minced)
1/4 cup spring onion (minced)
1/4 cup parsley( minced)
1/4 cup green bell pepper (small diced)
3 cloves garlic
pepper and salt to taste

Procedure:
1. Saute the garlic then add the ground beef, simmer for 2 minutes.
2. Add the rice and bell pepper, mix it well , dash with pepper and salt to taste.
3. Then add the rest of the ingredients and stir for a minute.
Serve it hot :-).

Banana Pop


I've got the idea of this Banana pop from the internet. This is very good for children's party, I am sure that the kids will love it as well as the adults. It is very easy and simple to make. All we need are these,

Ingredients:
1 chocolate bar ( melted in a pan with 1 tablespoon butter) or you can use chocolate fondue
4 big bananas ( cut into 3 each)
12 bamboo sticks
candy granules for coating ( you can use other coatings to make it more colorful, like choco granules, crushed peanuts, etc.)

Procedure:
1. First we need to put the banana on the sticks and put it in the freezer for an hour, this is very important to make the banana firm on the stick and will not be loosen when we dip it in the chocolate.

2. After an hour, dip each banana in a melted chocolate.

3. Then coat each with the candy granules.

4. Repeat the same procedure until you finish coating all the banana on the sticks.
5. After you finish refrigerate it then serve the banana pops!

Chinese Cabbage Salad



I had this salad at breakfast today, actually I was surprised that it really tasted good, I am not expecting it :-) It is my first time to prepare this, I do not even have any idea if there is something like this but I just used my imagination of what I can do to some left over Chinese cabbage and it turned out to be good, and here it is.

Ingredients:
1 plate sliced chinese cabbage
1 onion
5 cloves garlic
1/2 slice lime or lemon
2 tablespoons olive oil
salt and pepper to taste

Procedure:
1. Wash the Chinese cabbage properly, then arrange in a platter.
2. Heat the olive oil, then toast the garlic and put on top of the sliced Chinese cabbage.
3. Braise the onion then put on top as well
4. Sprinkle the lime juice, then dash with salt and pepper to taste
5. Serve it with a smile :-).

Spaghetti Aglio e Olio Con Carne


Spaghetti Aglio e Olio ( in English Spaghetti with garlic and oil) is a traditional Italian pasta dish  and is very popular in Italy. It is a cheaper version of spagheti dish compare to the one with tomato sauces. Simple as it can be. I make my version with meat that is why it is called Spaghetti aglio e olio con carne. It is light and yummy.

Ingredients:
1/2 Kilo Spaghetti
1 head galic (minced)
1/2 cup olive oil
salt and pepper to taste

For the toppings:
1/4 kilo ground beef  sauteed in onion and some chopped olives.

Procedure:
1. Cook the spaghetti according to its packaging procedure then se aside.
2. Heat the olive oil and put the garlic just making it light brown then pour in the spaghetti
3. Mix well and dash some salt and pepper to taste, mix well until it is evenly flavored.
4. Serve it  with ground beef toppings like the picture on top :-).

Mango Float


Mango float is  a delicious dessert that uses mango as the basic ingredient. Very easy to make I even have a 5 year old nephew who knows how to make this. This is my family's all time favorite dessert.

Ingredients:

3 pieces ripe mangoes
1 big can Condensed milk
1 big can Nestle Cream
any chocolate biscuits (Graham is the best )

Procedure:
1.  Mix the condensed milk and all purpose cream. Whisk together.
2. Slice the mangoes thinly.
3. Powderized the biscuits then sift it to remove the lumps.
4. In a dish that you are going to use, arrange in layer alternately the cream and milk mixture, mangoes and powdered biscuits until all the ingredients are consumed. Refrigerate before serving.

Shredded Carrots and Cabbage Salad

A delicious shredded carrots and cabbage salad with yoghurt. Perfect to serve in the morning. I like the blending of the flavor in this salad. Try it. I am sure that you will love it!

Ingredients:
Shredded Carrots
Shredded Cabbage
Diced green bell pepper
Yoghurt ( any flavor that you want)

Procedure:
1.In a serving platter arrange all the vegetable ingredients properly.
2. Pour in the yoghurt then serve.:-)

Ukoy ( Squash and Shrimp Fritters)



Ukoy is a delicious Filipino dish that is serve as a snack, appetizer and even as a viand. Easy to make and budget friendly this recipe usually uses sweet potato, but I used squash, since squash is abundant and cheaper in my place. Here is my way of cooking it.


Ingredients:
400 grams squash
1 cup flour
2 eggs
1 onion ( finely chopped)
salt and pepper to taste

Procedure:
1. Shred or grate the squash then in a mixing bowl , mix all the ingredients
If the mixture is too dry just add 1 egg

2. Spoon the mixture and fry it with shrimp on top.
3.When it's already golden brown it is ready to be served.
 Enjoy your food :-)

Papaya Adobo



Today when I was at the market I saw unripe papaya and my childhood memory of papaya adobo flashed back. I bought one and I cooked it the way my mom prepared it for us. Delicious!

Ingredients:
1 unripe papaya
1 onion
1/4 teaspoon ground pepper
1/4 cup soy sauce
3 tablespoons vinegar


Procedure:
1.  Peel the papaya and remove the seeds

2. Slice it into strips.
3. Saute the onion then add the papaya and ground pepper, simmer for a minute.
4. Add the soy sauce and vinegar, stir ocassionally until it is done! Serve it hot and do not forget to smile :-)

Guacamole



A Mexican dish that will surely boost your appetite. Guacamole is an avocado dip and popular not only in Mexico where it originated but in many countries all over the globe. Creamy and yummy. I make this one a little chunky because that's how I like it, I do it also in a very simple and easy way. Have fun doing your guacamole!


Ingredients:
1 Ripe avocado
1 tomato
1 small onion ( finely chopped)
salt and pepper to taste
2 tablespoons lime juice or calamansi

Procedure:
1. Mash the avocado in a bowl and stir in the rest of the ingredients then mix well.
2. Serve it with tortillas or as a dip  for fried meat or fish.( You can add chopped chilli and coriander)

Bicol Express With Patis


Mmmmmmmmm Spicy! The tongue biting flavor of the chilli makes you run expressly to look for a water to drink, originated in Bicol ( a region in the Philippines) that's where it got its name Bicol Express!. I postd bicol express before but this time I didn't use salt, instead I used fish sauce, one of Filipinos favorite condiments. The fish sauce makes the dish yummier. Try it!

Ingredients:
1/2 kilo pork or beef
1 onion
5 cloves of garlic
1/4 cup fish sauce (patis)
1 1/2 cups coconut milk
1/4 kilo chilli (jalapeno or cayenne remove the seeds) Siling haba
1/2 Teaspoon ground pepper

Procedure:
1. Saute garlic and onion.
2. Add the meat, simmer then add the fish sauce (patis) and ground pepper simmer and stir ocassionally.
3.If the meat is already tender add the chili, simmer for 4 minutes
4.Add the coconut milk and if its already boiling turn off the heat, then serve it.

Yema Balls



I loved this dessert when I was younger but, I still love it until now. I make this popular dessert in the Philippines in a very simple and economical way. I omitted egg and sugar. Instead of rolling it over the sugar I used the toasted flour. So here is my way of making yema balls, have fun!




Ingredients:
1 big can condensed milk (395 grams)
1/4 cup flour ( toasted and set aside)



Procedure:
1. In a pan put the condensed milk, over medium heat, and bring it to boil.

2. Stirring constantly until the milk becomes mushy  like the picture below. If this is already the texture of the milk, turn off the heat, then transfer in a container and allow to cool.
3. Form into balls and roll over the toasted flour. ( Sorry I tasted the other half of it:D really yummy!)


4. Serve it  in your own style. To make it stay longer you can wrap it in water cellophane or keep it in a jar.

Simple Beef Mechado


Mechado can be cooked with fats or marinating sauce or both, this is different from menudo and caldereta because mechado's sauce is lighter compare to the other 2 dishes. This is just a simple beef mechado.

Ingredients:
1/2 kilo beef ( marinate with 1/4 cup soy sauce and 2 tablespoons of lemon juice or calamnsi)
2 potatoes ( diced or cubed)
2 carrots ( diced or cubed)
1/2 cup tomato sauce
1 small onion
4 cloves garlic
Spring onion
salt and pepper to taste


Procedure:
1. Saute garlic and onion, add the beef without the marinating sauce, saute for 2 minutes then cover and simmer for few minutes.
2. Add the marinating sauce and tomato sauce, simmer until the beef is tender. ( Add water if necessary)
3. Add the carrots and the potatoes, simmer for few minutes, check the taste then add salt and pepper if necessary. Cover until the vegetables are cooked.
4. Increase the heat then add the spring onion. After 30 seconds remove from heat. Do not cover to prevent the vegetable from discoloraion.
5. Serve it hot and with a smile :-).

Avocado Ice Cream


I am still trying to make different flavors of ice cream using natural fruits as a flavoring, and today the avocado ice cream is a big success!  Here is my recipe for it.


Ingredients:
500 grams all purpose cream ( Nestle, Alaska Crema, etc)
370 grams condensed milk 
1 cup evaporated milk
1 small avocado ( less half a kilo)


Procedure:
1. Put all the ingredients in a blender, blend well.
2. Pour in a container and put in a freezer.  Mixing every 3 hours for 3 times then freeze until frozen.
3. Serve it with a smile :-).

Radish Salad

Just plain and simple radish salad but the taste is satisfying. I love this salad ever since I was young, my sister always wants me to make this for her specially if our viand is fried fish, really yummy!
 I have posted radish and tomato salad from my previous blog and that combination is also yummy. :-)

Ingredients:
1 medium size radish
1 onion (minced)
2 cloves garlic (minced)
1 teaspoon minced ginger
1 lime or 2 tablespoons vinegar
spring onion for garninshing

Procedure:

1. Slice the radish thinly then squeeze with salt until the juice will come out, remove it then set aside.
2. In a mixing bowl, mix all the ingredients thoroughly.
3. Serve it with a piece of meat or fish.

Ginger Tea with Oregano

My throat is itching today and I do not want to take medicine so I wanna go for something natural. My friend said that ginger is good for treating itchy throat or even cough. I read also in the internet about it. I like the taste and its even better with oregano. Here is how to do it.


Ingredients:
thumb size ginger (sliced thinly)
4 cups water
1 teaspoon oregano flakes ( if fresh oregano is available much better)

Procedure:
1. In a pan put 4 glasses of water then add the ginger and bring to a boil for 8 minutes.

2. Add the oregano flakes and turn off the heat after a minute.

3. By using a strainer, drain the tea and serve it warm. Really soothing!


Choco Milk Shake

I just feel like treating myself with this choco milk shake under the scorching heat of the sun. Refreshing myself  while listening to my favorite love songs. Simple and easy to do.

Ingredients:
2 tablespoons sweetened chocolate powder
1/4 cup fresh or evaporated milk
6 ice cubes
1 tablespoon sugar

Procedure:
1. Put all the ingredients in a blender,  blend well until the texture is firm and smooth.
2. Put in a serving glass with a straw and serve it with a smile :-)

Ground Beef Fiesta

This is very economical and not too meaty because the amount of vegetables and ground beef are equal, and yet the savor of the dish is still excellent. I made it like this because during the time that I cooked it there some other meat dishes. So if you want this dish meatier just less the amount of carrots and potatoes.

Ingredients:
1/2 kilo ground beef
1/2 kilo potatoes( small diced)
1/2 kilo carrots (small diced)
1 big onion
1/2 cup soy sauce
8 cloves garlic
5 bayleaf ( laurel)
4 hard boiled eggs( sliced into 5 parts each ) If egg slicer is available you can use it.
salt and pepper to taste


Procedure:
1. Saute the garlic and onion, then add the ground beef and simmer for few minutes.
2.  Add the soy sauce, bay leaf, salt and pepper simmer for 3 minutes.
3. Add the potatoes and carrots and simmer until it is done.
4. Serve it, topped with sliced eggs and if spring onion is available you can sprinkle some too.

Roasted Tuna



I need to feed 6 friends so I decided to cook this for everyone, actually I really want to grill this but griller is not available so I just roasted it in the oven. Everybody wants it soft and juicy but well-cooked that's why I roast it in medium heat to avoid drying. It turned out good and I just wanna share.

Ingredients:
Tuna's tail
2 limes or 6 calamansi
1/4 cup soy sauce
salt and pepper


Procedure:
1. Clean the fish properly and slit an inch apart like in the picture below
2. Marinate with lime juice, soy sauce, salt and pepper for 30 minutes.
3. Preheat the oven at 170C, then roast each side for 40 minutes or until done.
4. Serve it hot.
