Sinampalukang Manok

Sinampalukang Manok is a sour soup chicken dish related to sinigang but this dish is simpler and lighter in taste, but it really depends on you, if you want it strong or lighter in taste. Here is my version of this.

Ingredients:
1/2 kilo chicken
4 cayenne pepper or siling haba
1 knorr chicken cube
2 tomatoes
4 cloves garlic
1/4 cup tamarind soup (boil 1/4 kilo of sampalok for this) or can be replace with 2 tablespoon sinigang mix
2 tablespoons fish sauce ( patis)
1/4 kilo mixture of spring onion and parsley or any green leafy vegetables of your choice

spring onion and parsley

Procedure:
1. In a blender put the, chili, tomatoes, garlic, tamarind juice, chicken cube and patis then blend well to make it like a paste.
2. Arrange the chicken meat in the pot then pour in the paste mixture, cover and let simmer until it bring out its natural soup. and continue to simmer until the chicken is cooked.

 3. Add 2 cups of water and the white parts of spring onions, then continue to simmer until it is fully cooked.
4. Add the greens then turn off the heat.
5. Serve it hot.
