Ampalaya with Tofu

All my favorite ingredients in one healthy dish, absolutely yummy! The light taste of tofu infused well with the bitterness of the bitter melon making the taste appealing plus the smell of the bell pepper will tickle your appetite :D. Try this recipe.

1/2 kilo bittermelon (ampalaya)
3 squares tofu or tokwa ( cubed and fried)
2 eggs (beaten)
3 cloves garlic
diced bell pepper
salt to taste
bitter melon

1. Saute the garlic then add the ampalaya simmer and stir occasionally until half cooked.
2. Increase the heat then stir in the beaten eggs, mix well until it coats the ampalaya then add the bell pepper, fried tofu and salt to taste.
3. Simmer until done then serve. :)
