Humba


Humba is one of the best pork dishes that I like and this is so popular in the Visayas and Mindanao region of  Philippines, it resembles adobo but humba has a sweet taste from pineapple juice. A unique taste from all the ingredients that blended well during the cooking process. Try this dish and you will definitely like it.

Ingredients:
1 kilo pork with fat 
1/2 teaspoon black pepper
2 tablespoons black beans
1/4 cup soy sauce       
3 cloves garlic 
1 cup pineapple juice
1 cup pineapple chunks
1/4 cup vinegar

Procedure:

1. Slice the pork then separate all the fats from meat, marinate the meat with soy sauce, black pepper and vinegar then set aside.
2. In a pan put all the fats and cook until it is golden brown. Set aside
3. Saute the garlic and onion then put the marinated meat and simmer for few minutes.
4. Add the cooked fats,  pineapple and pineapple juice then simmer and stir occassionally
until meat is tender.


5. Add the black beans and simmer until done.
6. Serve it with rice.


I did not put sugar for this recipe because the pineapple juice has provided enough sweet taste.

  1. im not a real fan ng mga matatamis na ulam, at di rin po magaling magluto pero nakaka-engganyo po ng pictures gusto ko tuloy magluto nito loobin

    1. subukan mo, baka magustuhan mo, kung ayaw mo talaga sa matatamis pwede mo alisin na lang ang pineapple juice so parang adobo lang sya humba style may pinya :) dagdagan mo na lang kunti ang vinegar

  5. I always cook Humba a different way and without pineapple juice and pineapple chunks and vinegar. It's the Chinese version. But I am encouraged to try your recipe out one of these days to see if my family will like it. By the way, I usually cook Bihon day after using the leftover humba.

  11. ask ko lang po. bakit po pineapple ang nilagay? yung natikman ko pong humba na niluto ng karoom mate ko from Cebu, ang nilagay nya po is banana blossom. ano po ba talaga ang yung exact ingredient ng pork humba? many thanks....

Pwedeng lagyan ng pineapple, pwedeng banana blossom nasa sa iyo po kung ano ang gusto mo, kanya kanya kasing style ang pagluluto ng mga tao kaya wala talagang masasabi mong exact, kasi maaring sa iba di exact sa kanila ang exact para sa iyo kasi iba din ang style nila. Ako gusto ko may pinya kasi naneutralize ng pinya ang lasa at sumasarap ang blending ng lasa ng pinya sa parte na mataba, bawas umay. Masarap din ang banana blossom kaya pagnaghuhumba ako minsan banana blossom din nilalagay ko.

  13. Ito po bang black beans ay yung maalat po na nasa lata? Tausi po yata ang ibang tawag doon, o may iba pa po. Picture palang masarap n po, kaya try ko po loobin.

  14. My kids don't really like tausi. is there an alternative for that? Is it still humba if the tausi is not there?
