Law-uy is popular in the Mindanao region of Philippines, all of my neighbors have their own garden of vegetables for law-uy, this is a very simple way of cooking the vegetables. This dish is a counterpart of laswa from the Ilonggos and dinengdeng from the Ilokanos, maybe there are some other vegetable dishes which resembles to this, you can share some info by leaving a comment, thank you.

1 onion
6 pieces okra
2 eggplant
1 bunch alugbati
1/2 kilo squash
some fried fish
3 cups water
salt to taste

1. In a pot put the water, onion,  fried fish and squash then allow to boil until the squash is half cooked.
2. Add the eggplant and okra, simmer until half cooked, then increase the heat so that when we put the leaves it will not be grayish.
3. Add the alugbati and salt, simmer until cooked.
4. Serve it hot.
