Lechon Paksiw


I made this from the lechon that I cooked in the oven ( click here for the lechon recipe), I hope you will try this because even if it is oven-cooked the taste is still the same from the original lechon that we can buy.

Ingedients for 4 servings
1/2 kilo lechon ( cut to your desired size)
1/2 cup vinegar
2 tablespoons soy sauce
4 cloves garlic
1/4 cup bread crumbs
2 cups water
1 tablespoon sugar or to taste
ground pepper
2 pieces laurel or bay leaf

Procedure:
1. Saute the garlic then add the lechon, ground pepper, vinegar, laurel, sugar and soy sauce, then simmer for 10 minutes over low heat.
2. Add the water and simmer over low heat until the  lechon is so tender, stirring occasionally to avoid sticking at the bottom of the pot.
3. Slowly sprinkle the bread crumbs and simmer for few minutes until done.
4. Serve hot with rice.
