Homemade Camote Q

Sweet Potato with crystalized sugar is one of the popular snacks in the Philippines, it is put in the bamboo skewers and we simply called it camote cue. I learned to cooked it as early as 9 years old, because it is very popular in our time that's why I am interested to learn how to cook it at a very young age. Simple and easy to prepare, this is how I do it.

Ingredients
2 medium size sweet potatoes ( sliced to your desired size)
oil for frying
sugar
Sweet Potato

Procedure: 
1. Heat the oil
2. Put some slices of the sweet potatoes then fry until it start to be brownish in color then put some sugar.
3. Stir every now and then specially when the sugar starts to be melting, stir well until done. Then remove and do the same procedure with the rest of the sweet potatoes.
4. Serve hot with your favorite drinks.

Kung Pao Chicken


Kung Pao  means being stir fried, and has a sweet spicy sauce usually with peanuts. This cooking method originated in in the Szechuan province of China and is popular with chicken ingredients. The Kung Pao chicken is one of the most popular Chinese recipe in Chinese cuisine but this has many regional variations. The one that I tried is a Chinese Western version, making it less spicy. This is simple and easy to prepare so please do not hesitate to try. Enjoy your cooking.

Ingredients:
   1/2 kilo chicken breast ( cut into chucnks or cubes)
    2 stalks spring onion ( chopped)
    2 tablespoons oil
    1 tablespoon chopped garlic
    1 tablespoon rice wine
    1 tablespoon ginger strips
    1/2 cup peanuts
    1 teaspoon rice vinegar
    2 tablespoons soy sauce
    1 tablespoons brown sugar
    1/4 teaspoon cayenne or chili powder
    1  tablespoons cornstarch dissolved in 4 tablespoons water

Procedure:
1. Marinate the chicken with  rice wine, soy sauce and corn starch, then set aside.
2. Meanwhile, over high heat saute the ginger, then garlic when its brownish add the marinated chicken until 80 percent cook, stirring ocassionally.
3. In a bowl mix all the ingredients for the sauce: vinegar, sugar, chili powder and dissolved cornstarch then pour in to the chicken, and continue stirring until the sauce thickens and done.
4. Add the peanuts and spring onion stir well until coated.
5. Serve it hot with rice.

Sauteed Beef with Carrots and Potatoes



A simple beef recipe, but it will leave your taste buds satisfied. I cooked this very simply by just sauteing the beef anduntil tender. Economical and the time preparation is short, therefore I recommend this recipe for you to try.

Ingredients:
1/2 kilo beef
2 carrots
3  potatoes
4 cloves garlic
1 onion
3 tablespoons soy sauce
1 bell pepper
3 stalks spring onion for garnishing
ground pepper according to your taste
salt to taste
water

Procedure:
1. Saute the garlic and onion then add the beef and saute for 5 minutes or until the pinkish color is gone.
2. Add the soy sauce, and ground pepper then simmer, add water that is enough to make the beef tender.
3. Add the carrots and potatoes then simmer until cooked.
4. Add the bell pepper and simmer for 2 minutes, then add salt if necessary.
5. Turn off the heat then serve, topped with spring onions.

Greek Rice


I saw and tasted this from a buffet restaurant and asked the waiter what is the name for that dish and he said Greek Rice, I browsed the internet about this, and there are lots of different recipes for this. This is my version of Greek rice.

Ingredients:
3 cups cooked rice
1 onion (minced)
1 carrot (minced)

red bell pepper (minced)
1/2 cup raisins
1 cup minced cooked chicken breast
2 tablespoons oil 
1/2 teaspoon chicken powder
Salt to taste

Preparation:
1. In a pan, over medium heat, saute onion until brownish, then add the carrots, bell pepper, chicken breast and chicken powder then simmer for 2 minutes.

2. Stir in the rice and mix well, then add salt to taste. 
3. Simmer for 2 minutes, add the raisins and mix well, then serve hot. 

You can add some green peas, pineapple tidbits, corn kernel and sweet ham for this recipe.

Braised Pork Ribs


Braised pork ribs with a tasty sauce is a delight to your taste buds. This is very flavorful, so I am sure that your love ones will love this. Braising is a method of cooking where in you brown the meat before you cook it thoroughly, giving a nice color when it is cooked and it also allow the meat to lock in the flavor while cooking. Try tis cooking method sometimes and you will see the difference.

Ingredients:
1 kilo pork ribs
1/2 cup soy sauce
1 cup pineapple juice
2 cups water
4 cloves garlic
1 teaspoon chilli flakes ( optional)
ground pepper


Pork Ribs
Procedure:
1. Marinate the ribs with pineapple juice, soy sauce, and ground pepper for an hour, then remove and set aside the marinating sauce because we are going to use it.
2. Heat a little oil in a pot then braise the ribs, after braising move the ribs at the side of the pot so that we can saute the garlic. After sauteeing the garlic pour in the marinating sauce then simmer for few minutes.
3. Add the water and chili flake then cover, stirring occasionally until it is tender. When it is already tender and still soupy, increase the heat until the soup is gone. Making the ribs saucy and savory.
4. Sprinkle with some toasted garlic and spring onion then serve.

Sweet and Sour Whole Tilapia


Lately I am practicing how to make a sweet and sour that is just lightly sweet because there is one person who loves sweet and sour but he said mine is too sweet :D I think this one is just right. I hope I can get the taste that he wanted.

Ingredients:
2 Fried whole tilapia ( fry it with salt so that we will not put salt later)
1 onion
2 cloves garlic
2 tomatoes
1/2 cup of diced bell peppers (assorted color if available)
1 cup pineapple juice
1 tablespoon ginger juice ( shred the ginger then extract the juice)
1 tablespoons lime or calamansi juice

Procedure:
1. Saute the garlic, onion and tomatoes then, add all the ingredients except the fried fish, let simmer for few minutes.
2. Add the fish and simmer until the sauce thickens.
3. Serve hot.

Beef Eggplant


A delicious eggplant and beef recipe that I copied from my Chinese friend in Thailand, when I was in there, some few years ago, I always request this dish from my Chinese friend who is an expert of this, she said the original recipe for this is really spicy. In this recipe I omitted the chilli paste. You can put some if you are a hot and spicy food lover.

Ingredients:
200 grams beef ( cut thinly)
500 grams eggplant
4 cloves garlic
2 cups beef broth
2 tablespoons soy sauce
2 tablespoons oyster sauce

Procedure
1. Boil the beef until tender and cut thinly, then save the broth(sabaw) because we will be using it later.
2. Saute the garlic then add the beef and soy sauce simmer for few minutes then add the broth and bring to boil.
3. Once boiling, increase the heat then add the eggplant, stir until cooked.
4. Add the oyster sauce and simmer for 2 minutes then turn off the heat.
5.Sprinkle with spring onion and serve it hot.

If oyster sauce and hoisin sauce are not available just add more soy sauce and a little sugar.

Savory Whole Shrimps


I am glad that I am allergic to shrimps or else I already ate it all :D, this is very easy and simple to prepare, so for shrimps lover out there I am inviting you to try this recipe. I am sure that you will like it.

Ingredients:
500 grams shrimps
1 red bell pepper
3 cloves garlic
1 onion
1/2 cup celery ( optional)
2 tablespoons lime juice or calamansi juice
spring onion
salt and pepper to taste

Procedure:
1. Saute the garlicand the white part of the spring onion.
2. Add the shrimps, lime juice, salt and pepper then let simmer for a minute.
3. Add the rest of the ingredients then simmer until done.
4. Serve it hot with rice.

Sarciadong Tilapia


Sarciado is a common fish dish that has a thick sauce from tomatoes and beaten eggs. Truly simple and easy to cook. Try it.

Ingredients for 4 servings:
1 big fried Tilapia
2 med. size tomatoes (sliced)
1 med. size onion (sliced)
3 cloves garlic ( minced)
salt and pepper to taste
2 eggs( beaten)
 water as you desired
Spring onion


Procedure:
1. Saute the garlic, onion and tomatoes then add water and simmer until the tomatoes are soften.
3. Add the fried fish, salt and pepper to taste, then simmer for few minutes.
4. Add the beaten eggs, stirring constantly so that it will be distributed evenly, then add the spring onion and simmer until done.
5. Serve it hot.

Ginataang Sitaw at Talbos ng Kamote


I loved this dish from my mom, but since it is difficult to find fresh shredded coconut in my place, I based my coconut milk measurement from bottled coconut milk, if you are using fresh coconut and squeeze the milk from it, after the first squeezing, put another water and squeeze to obtain 2 cups of liquid, so instead of using pure water in cooking use that second batch of coconut milk for extra yummy flavor. :D

Ingredients:
Some dried fish
1 onion
1 tablespoons ginger strips
2 cups water
1 cup pure coconut milk
1 bale string beans ( sitaw)
1 bale sweet potato tops ( talbos ng kamote)

Procedure:
1. In a pot put the water, ginger, onion, and dried fish then allow to boil.
2. Once it is boiling, increase the heat then add the string beans, stirring until half cooked.
3. Add the sweet potato tops( talbos), then stir, after a minute add the pure coconut milk, stir until cooked..
4.Serve with a smile :).

Simple Palabok




Palabok is a popular snack item in the Philippines, one of my favorites :D.If I have ample time I will share m recipe for this without using the ready-mix sauce.

Ingredients:
200 grams bihon (boiled and drained)
2 hard boiled eggs
2 cans smoked tuna or 1 cup tinapa
1 onion
3 cloves garlic
1/2 cup mince spring onion
1 big packet Mama Sita's palabok mix (follow the instruction in the package)



Procedure:
1. Saute the garlic and onion then add the smoked fish, let simmer.
2. Add the dissolved Mama Sita's Palabok Mix then simmer until the sauce thickens, turn off the heat and set aside.

3. In a serving platter arrange all the ingredients then serve.

Stir Fried Beef with Vegetables


Stir fried beef with vegetable is a delightful beef dish that you will surely love. Savory sauce that you cant resist. Try it.

Ingredients:
250 grams beef ( cut thinly into bite size)
200 grams broccoli
200 grams cabbage
3 cloves garlic
1 onion
1 carrot
2 tablespoons soy sauce
2 tablespoons oyster sauce ( optional)
salt and pepper to taste
water ( depends how tender the beef is)

Procedure:
1. Saute the garlic and onion then add the beef, stir fry until it turn to brownish in color then add the soy sauce salt and pepper, simmer for few minutes.
2. Add water and continue simmering until tender.
3. Add carrots and broccoli then simmer for few minutes then add the cabbage and oyster sauce, simmer until done.
4. Serve hot.

Pritong Atay at Balumbalunan ( Fried Liver and Gizzard)

This is one of the street foods in Bangkok, Thailand, specially in Onut soi 10 where I lived some few years ago. Every time I passed by at the booth selling this, I walked slowly and observed them cooking it, I saw limes, flour so I already had an idea what they put, then I tried cooking it and that's it, simple and easy, here is how to do it.

Ingredients:
200 grams chicken liver
200 grams chicken gizzard
1 tablespoon lime or calamansi juice
salt and pepper
1/2 cup flour
Gizzard and Liver

Procedure:
1. Marinate the liver and gizzard with lime juice, salt and pepper for 30 minutes.
2. After 30 minutes roll over the flour for breading then deep fry until golden brown.
3. Serve hot.

Tortang Tuna


Torta has different meaning in the cooking world for example, torta in Spain is different from torta of Mexico, and some various countries. I love torta and I am referring to a Tagalog torta which is consist of egg, flour and the base ingredient for it. This one is made of tuna and I love this tortang tuna so much. Try it.

Ingredients:
1 can tuna
1 onion chopped finely
2 eggs
1/2 cup flour
salt and pepper to taste

Procedure:
1. Mix all the ingredients then chill or refrigerate for 30 minutes before frying.
2. Spoon a portion and deep fry until golden brown.
3. Serve hot.

Chocolate Muffins

I am not an expert at baking but I am craving for some muffins last week that's why I tried this one. I baked the simple recipe and just put some frosting to make it attractive :D I am not being biased but it tasted good. Enjoy baking my friends.

Ingredients:
1/2 cup of sugar
1/2 cup of cocoa powder
   1 cup all-purpose flour
   2 eggs
   4 tablespoons butter
  150 ml milk
 1 tablespoon of baking powder


Proceure:
1. Sift the chocolate powder, baking powder and flour then set aside.
2. Mix the eggs, sugar, milk and butter then mix very well for 2-3 minutes.
3. Then slowly add the sifted ingredients. ( flour, baking powder and chocolate powder) after mixing it very well, pour n a muffin cups.
4. Preheat the oven at 180 degrees celcius then bake for 20 minutes or until done.
5. Let it cool then decorate and serve.

Tulingan Paksiw


One of the best dishes for fish is to paksiw it, if you avoid high calories food then better cook the fish this way than fry it. Paksiw is a kind of cooking in the Philippines by stewing the base ingredient with a vinegar and some spices.

Ingredients:
1 regular size skip jack tuna or tulingan
some ginger
onion
cayenne pepper or siling haba
1/2 cup vinegar
salt and pepper to taste

Procedure:
1. In a pot put the ginger, onion, vinegar, cayenne pepper, salt and pepper, then cover and let it boil, allow to simmer for few minutes to infused the flavor of all the ingredients.
2. Add the fish then cover and let simmer until done.
3. Serve hot.

Fish Congee


Congee can be served as a meal, and depends how you prepared it. I served this as a complete meal to a person who loves this kind of food so much, because he said congee will not make you fat due to its water content, it makes you full but you have eaten less carbohydrates  because it is soupy, he said " that is why I like congee or porridge with more soup not too sticky". Since he avoided eating meat I used  fish for this recipe. It is yummy!

Ingredients:

Fried Fish Fillet ( bite size)
1 cup rice
1 onion
3 tablespoons ginger strips
minced spring onion
toasted garlic
fish sauce ( patis)
ground pepper
water

Procedure:
1. Saute the ginger until brownish then add the onion, when it's sauteed add the rice, fish sauce and ground pepper, allow to simmer for 2-3 minutes before adding enough water.

2. Simmer until the rice disintegrated making the soup thick but not sticky. Add the fried fish and continue simmering for 5 minutes, add salt if necessary.
3. Serve with minced spring onion and toasted garlic.

Adobong Kangkong


Adobong kangkong is an original Filipino recipe, a popular vegetable in the Philippines, swamp cabbage or kangkong in Tagalog is available all year round, therefore you can cook this dish anytime you want it. Enjoy cooking.

Ingredients:
1/2 kilo Swamp cabbage ( kangkong)
1/4 cup soy sauce
1/4 cup vinegar
onion
garlic
salt and pepper to taste

Procedure:
1. Saute the garlic and onion then increase the heat before adding the swamp cabbage because the intense heat makes the vegetable retain its natural color and I like it that way.
2. Add the swamp cabbage or kangkong and soy sauce, then stir it until cooked.
3. Add vinegar, salt and  pepper then simmer until done.
4. Serve hot.

Salmon Sinigang


This is one of the best seafood sinigang that I've ever cooked . I prepared this for some special friends who love sinigang. Sinigang is a kind of stew in the Philippines that is well known for its sour flavor due to the tamarind or sampalok that's used in it. Every Filipino likes sinigang. My family's all time favorite, either chicken, beef,  pork or fish as long as it is sinigang, expect that the pot will be emptied :D.

Ingredients:
1/2 kilo salmon
some okra
some string beans
some swamp cabbage ( kangkong)
1 onion
3 tomatoes
1/4 cup fish sauce ( patis)
1 cup tamarind juice or 1 small pack Sinigang mix

Procedure:
1. In a pot put the onion, tomatoes, fish and fish sauce, cover and simmer until the fish absorbed the flavors.
2. Add water that is enough for serving ( around 1 litre), then let boil and simmer for few minutes.
3. Add the okra and string beans and let simmer for a minute, then add the swamp cabbage (kangkong) and let simmer until cooked.
4. Add the tamarind juice or sinigang mix then let simmer until.
5. Serve it hot.

You can add some eggplant and chili for this recipe.

Bola Bolang Kanin


I've got the idea of this recipe from South American dish which they called "Bolinho de arroz" It is simple and easy to make and a good way to save your leftover rice and make it into something delicious for your snack.

Ingredients:
1 1/2 cups leftover rice ( bahaw)
1 canned tuna
3 eggs beaten
1 cup water
1 cup all purpose flour
1 onion chopped

Procedure:
1. Mix all the ingredients very well, add water if it is too sticky.

2. Spoon a portion then deep fry over medium heat until golden brown then serve.

Caramelized Banana


Nothing beats the flavor of this dessert, you will surely ask for more. Lovely to chew and will give satisfaction if you are really craving for something sweet. It has a similarity to Philippine's banana cue. I love both :D. Here is my style of caramelized banana

Ingredients:
1/2 kilo banana ( any cooking banana, but saba is the best if it is available in your place)
1/2 cup white sugar
1 teaspoon butter

Procedure:
1. Slice the banana to your desired size then fried it. Set aside.
2. Caramelized the sugar and butter.


3. When it is done pour over the banana, cool a little then serve.

if you want the caramel not too dry you can add a little water, as for me, I want it that way when I can chew the crispy sugar :D

Oven Roasted Peanuts


I am going to cook Kung Pao Chicken that is why I baked this peanuts for my chicken dish. I do not like the salted peanuts at the shops because it is so oily and salty.

Ingredients:
1/2 kilo peanuts

Procedure:
1. Preheat the oven to 180 C for 10 minutes
2. Put the peanuts in a baking pan and bake for 6 minutes then mix well after continue baking for another 6 minutes or until done.
3. Let cool before serving.

Crab and Shrimps with Coconut Milk

I cooked this some few months ago, when I saw this photo from my files today I said holy crab!! I almost forgot that I cooked you together with shrimps lol. I am allergic to crabs and shrimps but my friends enjoyed this dish and here is the recipe for this.

Ingredients:
3 crabs
300 grams shrimps
onion
ginger
spring onion
2 cups coconut milk
salt to taste

Procedure:
1. In a pot put the crab,shrimps, onion and ginger then cook over medium heat until it simmers. Allow to simmer until the crab and shrimps are cooked
2. Add the spring onion and the coconut milk and simmer .
3. Add salt  to taste then simmer until done.
4. Serve and enjoy!

Boiled Squash with Fried Fish

We have some leftover fried fish today and half a kilo of squash in the refrigerator so I decided to use them all in one simple delicious recipe. I chopped 1 onion and put it in a pot with two cups of water and a cup of shredded fried fish. While waiting for it to boil, I peeled the squash and sliced it then wash and set aside.
When the water is boiling I added the squash and a little salt to taste. I covered and let it simmer until done while stirring occasionally. Turn the heat when it is cooked then serve hot.

Chicken Adobo with Potato



I am an adobo lover ever since :) and I love it with potato! My sister loved to cook it this way, that's why I learned it from her, although this style is common in the Philippines. Have you tried cooking adobo with potatoes? Try it.


Ingredients:
1/2 kilo chicken
3 potatoes
1/4 cup soy sauce
1/2 cup water
3 tablespoons vinegar
5 cloves garlic crushed
some ground pepper
salt to taste




Procedure:
1. Saute the garlic then add the chicken, simmer for few minutes.
2. Add the soy sauce and ground pepper, then simmer until the chicken meat is brownish bright in color then add the water and let boil.
3. Add the potato and simmer until tender.
4. Add the vinegar and let simmer until the taste blends well then add salt if necessary.
5. Serve it with rice and do not forget to smile :-)
