Oven Baked Bibingka

Bibingka is one of the most popular dainties ( kakanin) in the Philippines and there are various ways of cooking it. Since It is my first time to cook this, I used the simple way and that is baking it. It is yummy.
Ingredients for 6-8 servings:
2 cups all purpose flour
2 eggs ( beaten)
2 teaspoons baking powder
1/4 teaspoon salt
1 cup sugar
1 1/3 cup fresh milk
1/4 cup grated cheese
wilted banana leaves

Procedure:
1. Sift together the flour, sugar, baking powder and salt, set aside.
2.Pour the milk to the sifted ingredients then mix well, then add the beaten eggs and mix well until fully combined and smooth.
3. Put a wilted banana leaves in the baking pan that you are going to use, and bake for 45 minutes or until done in a pre-heated oven at 180C.
4. When it is done, sprinkle with grated cheese or coconut then serve.

                                         I re-cooked this today using muffin molder.

  3. gud am po. bakit po nahuli ang paglagay ng beaten egg? usually ksi sa nkikita ung egg ang una. curious lng po.

  7. You can substitute coffee filters for banana leaves, its just as good and cheaper.
