What to look for when using sushi knives

When it comes to using sushi knives, there is absolutely no
 rocket science involved. Just a few basic tips that have to 
be kept in mind while making the right choice warrant a bit of logic. They may be summed up as follows:

Cutting:
 The original sushi knife was aimed at cutting. Its job is to make sure that there are fine incisions at intended areas. However, the sushi knives aren’t going to walk out of their shelves by themselves and start cutting. They need to be hand-picked. The most basic tip to be kept in mind when choosing the sushi knife, is to determine the type of cut that is going to be made. A sushi, may require to be cut delicately and finely, so that its shapes can be used to make fine dressings for the dish that they are intended for.
Most complicated dishes that have their recipes explained in cookbooks will supply all the information needed with regard to using the most relevant knives. A number of people have already shared articles and blogs on their websites, explaining in detail the type of sushi knife that is required for a particular dish.

Slicing
Just as cutting, the slicing technique also follows the same principles. There are deep cuts and fine cuts. The fine cuts require a sort of sharp knife, one that can be used precisely. A deep cut, is the one that doesn’t require much precision.

Absorption:
 Most people believe that the knife on which a certain meat or fish is cut, is the main factor that results in the texture and taste of it. It is primarily for this reason that a lot of people nowadays have started using wooden or ceramide sushi knives.
However, using these knives is not all that easy. Take a 
knife and cut it. That’s what the general person sees as the real deal. If things were that simple, the whole debate over using the appropriate sushi knife would be completely invalid. A recent trend that has been seen nowadays is the fact that people use wooden sushi knives in order to cut their raw meat or raw sushi.
At first, it may seem absolutely confusing as to why someone would do something like this. But the rationality behind it is actually very simple. There are a number of ways it can be cut, a fine sushi knife being the best possible choice, the second next choice being a fillet knife. However, traditionally, it is perceived that the wooden knife, lends its texture and fragrance to the dish that is being used.
Therefore, it may be safe to say that the sushi knives are 
not used simply as a method to cut and slice as if it is some sort of apparatus, but an integral portion of the cooking procedure.

When it comes to paying attention to the sushi knives that 
are going to be used, and the manner in which they are going to be used, determining the end objectives is a better rationale when it comes to choosing and using sushi knives.

My Festive Viand for Breakfast

It's been a wile that I have not eaten fried tilapia, today I'm really craving for it, so I went to the market and bought some really fresh Tilapia. After cooking I paired it with salted egg and tomatoes. Fantastic!

Ingredients:
3 pieces medium size Tilapia ( Cleaned)
 1 tablespoons calamansi or lime juice
salt and pepper to taste

Procedure:
1. Sprinkle the fish with calamansi or lime juice, then salt and pepper and set aside.
2. Heat the oil until ready for frying then put the tilapia and fry it until golden brown, serve with anything you want and enjoy it with your loved ones. :-).

Ensaladang Mangga

"Walang tatalo sa sarap ng sawsawang ito " according to my sister, she always wants me to make this for her. It is very easy to make. Here is the recipe for it.

Ingredients:
1 mango (diced)
1 tablespoon bagoong
1 onion (diced)
1 tomato (diced)
2 tablespoons calamansi juice

Procedure:
1. Mix all the ingredients then serve. :-)


Or another option is to slice it like in the picture below 



Mangga at Bagoong




Mangga at bagoong ( mango and Shrimp paste) is a popular finger food/street food in the Philippines. The mango should not be so ripe nor so unripe, it should be "manibalang".

Baking Soda Solution


Some few weeks ago I posted about REDUCED BAKING SODA as a replacement for lye water or lihiya in making kutsinta by baking the baking soda with correct procedure, but not all have oven to do it and they send me emails if there is another solution, so I started to think about it and came up with this.

Now I will share the replacement of lye water or lihiya in cooking pichi pichi, it is very simple to do it. I will call this BAKING SODA SOLUTION, here is the recipe for it.
In every 1 teaspoon of baking soda we put 4 cups of water and allow it to boil over high heat for 5 minutes.
Make sure it will not overflow, so do not leave it unattended.


Allow to cool and keep in a safe place. This is now ready to be used for pichi pichi, kutsinta and any food that needs lye water or lihiya in cooking.

To use this for recipes remove the lye and replace the water with this.

Radish Flower ( Food Decoration)




Do you want to learn this simple food decoration? It is made from thinly sliced radish.
Here is how to do it.
1. We need 1 piece regular size radish, then thinly slice it.


2. Make a slit in each slice so that we can bend it easily.



3. Then get a toothpick and put each bended sliced radish like the picture below.

4. Put it alternately until you formed a lovely flower.

Food decoration 2

I am not good at this, but I just wanna share, so that you can get an idea for your gatherings just in case you want to have a little decoration for your food presentation. This apple swan will add attraction to your food. Here is how to do it.
First we need an apple.

Then cut a small portion to make it steady when we put it.
then cut 2 equal parts on both side living a space on top center side, as shown in the photo below

From the left side that we cut, we will cut 3 intersections from it, from small, smaller and smallest intersections, this will serve as a wing


Do the same at  the right side

then from the small part that we cut from the very beginning , form the neck and head part of the swan.

it will be like this or better:-)
then, we will push the left and right side to form as a wing and put the head using a toothpick, cut a little portion from the seed and use it as an eye for the head , here is our swan now, ready to add life to your food presentation.
You can now decorate your plates of food with this cute swan :-)
I hope you like it even if my creation is not perfect, at least you can get idea from it. :-)
