How to Save Your Leftover Pancit

Sometimes leftover pancit is a lot to be eaten again for the next meal and sometimes your loved ones are not excited anymore to eat the leftover pancit, so to save it from going to the bin, make it into another special dish, something crispy by wrapping it into spring roll wrapper ( lumpiang pancit). It is yummy and your loved ones will definitely love it.

It is very simple to do it, in a lumpia wrapper put some pancit then wrapped  and sealed the wrapper with a water or beaten egg.
Deep fry until golden brown and serve it hot with your favorite dipping sauce. Enjoy.

You have now a delicious new dish that's good for a meal or a snack.

Lumpia Ubod

Our viand yesterday afternoon was ginisang ubod ( sauted coconut pulps), and there are some leftover so I decided to make it into lumpia.

Ingredients:
ginisang ubod ( Click here for the recipe)
Lumpia wrapper
oil for frying

Procedure:
1. Spoon a portion of the ginisang ubod, then wrap well with a lumpia wrapper, repeat the process until everything is done.
2. Deep fry until golden brown.
3. Serve with dipping sauce and a sweet smile :-).

Bihon with Roasted Chicken

I cooked this because I have some leftover roasted chicken (lechong manok), I chopped it and used for this recipe, of course you can use a meat that's not leftover.

Ingredients:
1/2 kilo rice noodles
1 cup chopped roasted chicken
1  carrot ( strips)
1  onion
3 cloves garlic
1 cup sliced cabbage
6 cups water
salt and pepper to taste

Procedure:
1. Saute garlic and onion, then add the chopped roasted chicken, simmer for few minutes.
2. Add the water, cover until it boils then put the bihon, simmer for 3 minutes.
3. Add the rest of the ingredients simmer until it's cooked over medium heat.
4. Serve it hot.

Sarciadong ulo ng Isda ( leftover)

Today I recycled the leftover from the refrigerator, fried scrambled egg from yesterday's breakfast and fried fish head from last night's dinner. Since the fish head is big enough for 3 persons I decided to make sarciado so that we can have sauce for our rice and not too dry to eat.
I sauted the garlic and onion then add some tomatoes and 2 cups of water then I put the fish and simmer until it is tender and absorbed the spices, then I added salt and pepper to taste, then chop some spring onion and put it together with the egg, I simmered it for a minute then its done!
Ready to be served!

Green Beans with Sausage


I have a leftover sausage from yesterdays breakfast, that's why I cooked this so that I can used my leftover sausage before it will be rancid. Since the green beans are on sale at the supermarket nearby, I decided to used it. Here is the simple recipe that I cooked today.

Ingredients:
1/2 kilo green beans/Baguio beans ( cleaned and cut)
2 leftover sausage -longganisa-( sliced)
4 cloves garlic
2 tablespoons olive oil or any cooking oil

Procedure:
1. Saute the garlic then add the sausage.
2. Increase the heat then add the green beans, sprinkle with salt and pepper to taste then  stir fry until done.
3.  Serve it hot.

Omelette from leftover food

We have a cup of leftover ground beef from last night, thats why I decided to make this omelette, I just beat 5 eggs then put the leftover ground beef and mix well.
Heat enough oil in a pan then fry it until done, presto! You have a new viand without wasting the leftover.

Egg Fried Rice



Fried rice is a part of a typical breakfast of Filipinos, specially the combo fried rice ( longsilog, tapsilog, tocilog, etc). I decided to make egg fried rice for breakfast because I saw some leftover rice in the pot. How about you what are you going to prepare for breakfast today?  Good day everyone.

Ingredients for 3 servings:
3 cups leftover rice (bahaw)
2 beaten eggs
3 cloves garlic
2 tablespoons oil
salt or patis to taste

Procedure:
1. Saute the garlic then add the beaten eggs, by using a fork continue stirring it until cooked so that it will be scrambled well.
2. Add the rice and mix well, stir well every now and then, then sprinkle with salt.
3. Continue stirring until done. You can scrambled more eggs then chop it and put as toppings before serving.

Lettuce Banana and Chicken Salad

A simple and easy to make salad, I just recycled the chicken from the leftover last night. Added some stuff to make it something new, delicious and healthy. I shred the piece of fried chicken, sliced a banana and some lettuce, then I sprinkle with olive oil, and salt, squeezed a lemon and eat it. Delicious and satisfying!

Ground Beef Fried Rice


A complete meal made from my leftover rice, simple and easy to prepare and a good way to save your leftover rice from going into the bin. All we need are the following:

Ingredients:
    3 cups leftover rice ( bahaw)
    1 onion
    1/2 cup ground beef
    2 tablespoons soy sauce
    2 beaten eggs
    2 beef hotdogs (sliced)
     salt and pepper to taste
    chopped spring onion

Procedure:
1. Saute the onion over medium heat until brownish then add the ground beef, simmer until cooked.
2. Add soy sauce, salt and pepper to taste then simmer for a minute then add the rice, continue stirring until done.
3. For best result scrambled the egg in a separate pan then chop and pour in the fried rice, then mix well, and sprinkle with chopped spring onion then serve hot.

Bola Bolang Kanin


I've got the idea of this recipe from South American dish which they called "Bolinho de arroz" It is simple and easy to make and a good way to save your leftover rice and make it into something delicious for your snack.

Ingredients:
1 1/2 cups leftover rice ( bahaw)
1 canned tuna
3 eggs beaten
1 cup water
1 cup all purpose flour
1 onion chopped

Procedure:
1. Mix all the ingredients very well, add water if it is too sticky.

2. Spoon a portion then deep fry over medium heat until golden brown then serve.

Boiled Squash with Fried Fish

We have some leftover fried fish today and half a kilo of squash in the refrigerator so I decided to use them all in one simple delicious recipe. I chopped 1 onion and put it in a pot with two cups of water and a cup of shredded fried fish. While waiting for it to boil, I peeled the squash and sliced it then wash and set aside.
When the water is boiling I added the squash and a little salt to taste. I covered and let it simmer until done while stirring occasionally. Turn the heat when it is cooked then serve hot.

Bread Pudding



Leftover bread should not be wasted so I make it into bread pudding. A delicious snack for everyone!

Ingredients:
5  cups cubed bread
1 1/2 cups  milk
3/4 cup sugar
1/2 teaspoon baking powder
4 eggs ( lightly beaten)
2 tablespoons vanilla flavor
1/2 teaspoon oregano flakes


Procedure:
1.Soak the bread with milk for few minutes,  then combine all the ingredients.
2. Mix well with your hands and then pour in a greases baking pan. Chill for 30 minutes before baking
3. Preheat the oven then bake the pudding mixture at 180C for 45 minutes or until done.
Serve with coffee or tea.

Shrimp Fried Rice



I recycled some leftover rice  and make it into something special, since there are some shrimps in the refrigerator  I decided to make shrimp fried rice. I chilled the leftover rice so that it will be easy to separate.

I sauted 3 cloves of garlic then added 1 cup of shelled shrimps then sauted it for a minute before I added 2 beaten eggs stirring well to make it scrambled then I put the rice and mix well. Stirring occasionally until done then I put some minced bell pepper, salt and pepper to taste then stir a few minutes and that's it!

Leftover Fried chicken and sausage with Chayote



I have some left over fried chicken and sausage, and I want to save it from going into a waste can so I decided to use it immediately before it will be rotten. 


 I bought 2 pieces chayote (sayote) and sliced it.

 I saute the the garlic and onion then put the leftover fried chicken and sausage. I put some salt and pepper to taste then add the chayote and simmered it stirring occasionally until it is cooked.


 Then I served it with rice.

Leftover Fried Fish with Squash and Cabbage

I have a leftover fried tilapia so I decided to make it soupy with some vegetables.
First I boil 3 cups of water with one medium size tomato and onion, then I put the leftover fried fish. I let it simmer for few minutes allowing the flavor of the fish be extracted.Then I put the squash and salt to taste, when the squash is almost half cooked I put the cabbage and let it simmer until done. Serve it hot.

Fruit Skewers

 I have some leftover fruits from what I served yesterday to my guests. In order for it not to be rotten I decided to give it to the kids in the neighborhood because i cant consume all of it.Fruit skewer is also good for your parties, it's attractive specially if you have good variety of fruits.
We just need some skewers and variety of fruits. My leftover fruits are  just strawberries, grapes and persimmon. So I just sliced the strawberries into halves, then peeled the persimmon and sliced it to my desired pieces then put it on the skewers together with the grapes, after all the fruits were consumed, it is now ready to be served.

Fried Rice ( Leftover)

Starting today I will be posting dishes made from leftover food. There are some friends who requested this category so that they can get an idea and no food will be wasted. I made this fried rice from the leftover rice yesterday. 
Just break the rice apart until it is loosen then set aside.
In a pan saute 4 cloves of garlic then add the rice and stir occasionally.
 To make it more attractive I put some minced carrots and minced fried egg. I serve it with fried dried fish. We enjoyed eating it and saved the rice from going into the trash can.
