Squash and Carrot Fritters


This delicious squash and carrot fritter is very easy to prepare and very economical. All we need are the following:

Ingredients:
1 cup shredded squash
1 cup shredded carrots
1 egg ( beaten)
1 onion ( minced)
1 cup flour
1/2 cup water
salt and pepper to taste

Procedure:
1. Combine all the ingredients and mix well.
2. Spoon a portion and deep fry it until golden brown.
3. Serve it hot with your favorite dipping sauce.

Cheesy Macaroons



I made this cheesy macaroons because I was curious what will be the result if it is yummy or not? Well it is cheesy and yummy and I liked the cheesy smell in it.... something new. Try this recipe and you will love it.

Ingredients:
 100 grams dessicated coconut
1 egg (beaten)
1/2 cup condensed milk
2 tablespoons butter ( melted)
1/2 cup grated cheese

Procedure:
1. In a mixing bowl, mix all the ingredients

2. Prepare the paper baking cups, and put the mixture into it. ( around 3/4 full)

3.  Preheat the oven at 170 degrees celsius and bake it for 35 minutes or until golden brown.
4. Serve it :-)

Chillied Pork

Simple as it can be, this dish was not planned when I cooked it. It's just my friend wants to eat and nothing that I can serve so I checked the fridge of what I can cook and I came up with this recipe. Try it!

Ingredients:
100 grams pork ( cut thinly)
1 teaspoon chilli sauce
2 jalapeno pepper or siling haba
3 cloves garlic
Salt and pepper to taste

Procedure:
1. Saute the garlic then add the meat and simmer for 3 minutes.
2. Add the rest of the ingredients and simmer until done.
3. Serve it hot.

Simple Pancit Canton


Pancit is one of the most common treat during special occasions in the Philippines. There are various varieties of pancit but pancit canton is my most favorite because I like the texture of this noodles, firm and palatable. I always let my sister cook this for me when I was young and I learned to cooked this when I was around 17 years old (20 years ago :D) Now it is very easy and quick for me to cook this. Hers is the simple way of doing it.

Ingredients:
1/2 kilo pancit canton ( boiled and drained)
1/4 kilo ground beef
1/4 kilo cabbage
1 carrot
1 onion
3 cloves garlic
1/2 cup soy sauce
salt and pepper to taste
1 cup water

Procedure:
1. Saute the garlic and onion then add the ground beef and simmer for few minutes.
2. Add the soy sauce, salt and pepper cover for a minute, then mix well.
3. Add the water and bring to a boil then add the carrots and cabbage.
4.  When the vegetables are done pour in the pre-cooked pancit canton, then mix well.
5. Serve when it is done.

Ensaimada



Ensaimada is a  delicious bread that is popular in Philippines. This bread originated in Spain and  was introduced to Filipinos from former Spanish territories in the country. Until now this bread is one of the most wanted bread in Philippines. Personally I love this bread that is why I tried making it and the result is fine, that is why I wanna share the recipe that I followed and here it is.

Ingredients:
5 cups flour
1 cup sugar
3/4 cup fresh milk or whole milk (warm)
3/4 cup melted butter
3 teaspoons yeast
3 eggs
1 cup grated cheese

Procedure:

1. Dissolve the yeast in the warm milk for 10 minutes ( put the yeast and leave it for 10 minutes then mix)
2. Mix all the dry ingredients, make a well in the middle, then crack the eggs and beat it there.
 3. Then pour in the butter and milk with yeast dissolved in it, mix well and fold the mixture, then knead  until you form a dough.
4. Let it rise for 2 hours by covering it with a damp cloth.

after letting it rise, the size doubled
5. After 2 hours knead the dough for a while then slice it, make sure each slice should be around 80 grams to make one serving of bread.

6. Flatten each portion then put some grated cheese and roll it.
 7. Then twist it and form it like a knot ( like the picture below) and let it rise for 45 minutes.
 8. After 45 minutes ( it should be double in size too, if not doubled or at least almost doubled let it rise more) bake it in a preheated oven for 15-20 minutes at 180C.
9. When it is done brush it with butter or margarine then sprinkle with a little sugar.

Mashed-Baked Potatoes

Get ready for this creamy and yummy mashed potato that will surely tickle your taste buds. :-)


Ingredients
5 big potatoes
2 tablespoons butter
1 cup grated cheese (mussarela)
salt and pepper to taste

Procedure:
1. Boiled the potato until tender.
2. Slice into halves vertically, then remove the flesh and mash it properly with the pepper, salt  and butter
3. Put the mashed potato back into the skin then sprinkle with grated cheese and bake in the pre-heated oven for 10minutes or until done at 180 degrees celcius.


4. Serve it hot.



Grilled Skipjack Tuna ( Inihaw na Tulingan)


Grilling is one of the convenient way of cooking ( for me :-)) because you will just leave it there for 8 minutes or depends upon how high the heat you are using or if you are using charcoal, then you can check to turn the other side. When I went to the market I saw skipjack tuna ( tulingan) I grabbed the opportunity to buy it because it is very rare in the market to have this kind of fish. I knew this fish is good for grilling because when I was in Davao City, Philippines my sister grilled this most of the time which we enjoyed eating. Simple and easy to do. Have fun grilling.:-)

Ingredients:
2 regular size skipjack tuna ( tulingan)
1 lime ( juiced)
salt and pepper


Procedure:
1. Clean the fish properly then slit it to absorbed the lime.
2. Put the lime juice, salt and pepper before grilling.
 3. Make sure that the grilling rack is very hot before putting the fish so that it won't stick.
4. When grilling is done serve it hot and garnish it with your favorite vegetables. Enjoy your food :-)

Clam Soup


It is almost winter here in my place( South America). Cold weather always makes me craving for soup, but not the instant soup in the supermarkets, I want something simple and natural. I am lucky that when I went to the market I saw fresh clams. I bought half a kilo for my soup recipe which my mom always cook for us during rainy season in the Philippines. Here is the simple recipe for it.

Ingredients:
1/2 kilo clams
thumb size ginger
5 cups water
1/4 kilo spring onion
4 cayenne or jalapeno pepper ( siling haba)
1/2 cup parsley ( optional)
salt to taste


Procedure:
1. In a pot put the water, ginger, chilli and the white part of the spring onion, then bring to boil.
2.  When it is boiling add the clams and simmer for 5 minutes.


 3. Add the salt and the rest of the ingredients, simmer for a minute.
4. Serve it hot. Enjoy your clam soup. :-)

Stir Fried Spinach

This one I liked a lot :D  My original plan is to cook "adobong kangkong" but since swamp cabbage ( kangkong) is not available in my place I replaced it with spinach. I liked how it turned out, simply yummy!

Ingredients:
2 bale Spinach.
1 onion ( sliced into rings)
1/2 cup some mixed nuts
1/4 cup soy sauce
salt and pepper to taste
some cayenne pepper ( siling haba)

Procedure:
1.Saute the garlic and onion, add the mixed nuts and chilli simmer for a minute then remove and set aside.
2. Put the spinach and increase the heat for stir frying,  stirring well when its half cook add the soy sauce, salt and pepper then continue stir frying until done.
3. Put in a serving dish and top it with the sauted ingredients in number 1 procedure.
4. Serve it with a smile.





Pepperoni Pizza with Cashew Nuts


This pizza was a result from  curiosity. My friend and I were eating cashew nuts when we decided to have pizza and I said what if we will add cashew nuts on it? We tried and we liked the taste, the nuts made the pizza creamy and really yummy.

  Ingredients:
1 big size pizza crust
1 medium size onion ( sliced thinly into rings)
pepperoni
mozarella cheese ( grated)
pizza sauce.
1/2 cup cashew nuts
mushroom ( optional)

Procedure:
1. Put the pizza sauce on top of the crust.
2. Sprinkle the grated cheese
3. Arrange all the toppings properly
4. Preheat oven to 180 degrees celsius and bake the pizza for 10-15 minutes

 Ingredients for pizza sauce:

1 cup tomato sauce
1/4 cup crushed cashew nuts
2 cloves garlic
1 small size onion
1/2 teaspoon sugar
2 tablespoons evaporated milk
dash of salt and pepper

Procedure for the Sauce

1. Saute the garlic and onion
2. Add the crushed cashew nuts and simmer for few minutes, put a dash of salt and pepper
3. Add the tomato sauce, sugar and milk simmer until done.
