Garlic Crab

Very quick and easy to cook, yet the taste is superb! Try it.

Ingredients:
1/2 kilo crab
1 head garlic ( minced)
1 tablespoon lemon or calamansi
salt and pepper to taste
1/4 cup mince spring onion


Procedure:
1. Saute the garlic until brownish then add the crab and simmer until the color turned deep orange.
2.Add the lemon juice, salt and pepper to taste, then simmer for 10 minutes over low heat stirring every now and then, turn off the heat and sprinkle the spring onion.
3. Serve it hot.

Ginataang Talbos ng Sayote

Maybe this dish is unusual to you, but I can say that this is very yummy and full of fiber, therefore it is good for our digestion, have some and see the result :-). I used one whole grated coconut for this recipe.

Ingredients:
1/2 kilo talbos ng sayote
1/4 kilo shrimps (de-shelled and cleaned)
1/2 cup thick coconut milk ( kakang gata)
1 1/2 thin coconut milk ( ikalawang piga)
1/2 onion
1 cloves garlic
thumb size Ginger
Cleaned talbos ng sayote

Procedure:
1. In a pot put the thin coconut milk, shrimps, ginger, onion and salt the bring to a boil stirring constantly.

2. Once boiling add the sayote tops and stir until fully coated with the coconut milk then simmer until cooked.
3. Add the thick coconut milk and simmer until done. Serve it hot.

Baked Pinatisang Manok


Fish sauce (patis) is a common condiment in the National Capital region of the Philippines. At first I do not like fish sauce because of its strong smell, but when I tasted it, I loved it. I love to use it in my cooking because it adds flavor to my food. Yummy!

Ingredients:
1/2 kilo chicken thigh ( cut into serving pieces)
3 tablespoons fish sauce ( patis)
2 tablespoons lemon or calamansi juice
1/4 teaspoon ground pepper

Procedure:
1. In a mixing bowl combine all the ingredients and mix well, marinate for 2 hours.
2. Preheat the oven at 250 degrees celsius then bake the chicken for 20 minutes.
3. Remove from the oven then serve with your favorite dipping sauce.

Tilapia na Paksiw sa Gata

Perfect blending of flavors.

 Ingredients:
2 tilapia ( cleaned )
1/4 teaspoon whole black pepper
1 medium size onion
thumb size ginger (sliced)
3/4 cup vinegar
1 cup coconut milk
siling haba
salt to taste

Procedure:
1. In a cooking pot put the vinegar, all the spices and the fish then cover and bring to a boil.
2. Simmer until the fish is cooked.
3. Add the coconut milk and salt, simmer until done
4. Turn off the heat and serve it hot.

Buko Pandan Drink

I am planning to make buko pandan salad but the young coconut that I bought is not enough so I decided to make it into a drink which turned out to be very refreshing and delicious, here is the recipe for it, this can be served if you have a special gatherings too.

Ingredients for 12 servings
1 cup shredded young coconut (you can add more)
1 big can condensed milk
1 big can evaporated milk
3 cups coconut water
6 cups pandan water
1 packet green gelatine or buko pandan flavor( 24 grams) cook according to its packaging procedure then cut into dice.
sugar to taste


Pandan leaves


Procedure:
1. Boil 10 pandan leaves with 8 cups water until the aroma comes out so that we can get the pandan water ( around 45 minutes to 1 hour is better) Set aside and let cool.
2.In a mixing bowl combine everything and mix well. Refrigerate for few hours.
3. Serve and enjoy.

Bachoy


A comfort food that I grew up with, every time my mom and I went for shopping in our town, we dropped by at a snack center and order this bachoy, as in every weekend :-). This is just simple, my version, I will make the La Paz Bachoy soon, that one is the best!

Ingredients for 4 servings:
1/2 kilo pancit ( blanced)
1/2 kilo pork ribs ( buto buto)
 12 cups water
1 onion
1/4 teaspoon whole black pepper
1/2 piece pork heart ( boiled and sliced into strips)
1/4 kilo pork belly ( fried and sliced into small pieces)
1 cup crushed chicharon ( pork crackling)
1/4 cup spring onion for garnishing
1/4 cup toasted garlic for garnishing
eggs ( optional)
salt to taste
   
Some of the ingredients

Procedure:
1. In a pot put the pork ribs  onion, whole black pepper and salt then allow to boil for a delicious soup for our bachoy. When it is ready, arrange all the ingredients in a serving bowl equally divided into servings ( noodles, pork heart, pork belly, chicharon, garlic, spring onion,) You can crack an egg if you want. Scoop the boiling soup from the ribs and pour it over the servings.

2. Serve it immediately and enjoy.

Note: There is no fresh pancit when I cooked this, so I just used instant noodles, without the flavoring, I cooked it and drained.You can remove the meat from the ribs and add to the servings.

Shanghai Rice


An easy to prepare fried rice loaded with yumminess.

Ingredients for 3 servings:
2 cups cooked rice
1/2 cup ground pork or beef
1 cup of mixed green peas, carrots,potato and bell pepper
3 cloves garlic
1/2 cup chopped spring onion
3 pieces hotdog ( diced)
2 eggs ( fried and chopped)
salt and pepper to taste

Procedure:
1. Saute the garlic then add the ground beef and saute for 2 minutes.
2. Add the hotdog, mixed vegetables and simmer for a minute.

3. Add the rice and mix well and stir until fully mixed, then add salt and pepper to taste, continue to stir until done and turn off the heat, top with chopped egg and spring onion.

4. Serve it hot.

Stuffed Rolled Beef


 Tangy tomato sauce based dish that will surely boost your appetite, so make sure that you have plenty of rice.

Ingredients for 3-4 servings:
1/2 kilo   Beef Sirloin   ( Sliced thinly and pounded )
2 tablespoons lemon or calamansi juice   
hotdog
green beans
bell pepper
carrot
1 cup tomato Sauce
3/4 cup water
1/2 cup diced carrot
1/2 cup green peas
Salt and pepper to taste
Stuffing ingredients


Procedure:
1. Sliced the beef thinly and pound it. Marinate with lemon or calamansi juice, salt and pepper for 30 minutes.
 2. After 30 minutes stuff it with carrot, hotdog, bell pepper and green beans.
 3. Roll it tightly, slice and secure each slice with a toothpick then lightly fry it and set aside.


 4. Saute the garlic and onion then add the fried rolled beef then simmer for a minute.

5. Add the tomato sauce then simmer for 2 minutes, then add the water and simmer until thick.
6. Add dice carrots, green peas, salt and pepper to taste then simmer until done.
7. Serve it hot with rice.

  

Salad Delight


I made this salad from my leftover ingredients.

Ingredients for 6 servings:
1 cup pineapple tidbits
1/2 cup raisins
1 cup red nata de coco/kaong
1 cup yellow nata de coco/kaong
1 cup shredded young coconut
1 cup condensed milk
2 cups all purpose cream/ Nestle Cream

Procedure:
1.  In a mixing bowl combine all the ingredients and mix well.
2. Refrigerate before serving and enjoy. :-)

Ice Cream sandwich

Bring out the child in you and treat yourself with this combination of ice cream and bread. I loved this when I was young and just craving it today, so I made one for myself. :-)

Just slice  the bread to make a space for the ice cream.

Put some ice cream (any flavor of your choice)
